Happy 626 Day! Today we’re celebrating Experiment 626, better known as Stitch, with these Stitch Juice Pops! Made with fresh fruit juice, these Stitch shaped frozen pops are a quick, easy, and delicious summer treat!

Juice pops have become one of my favorite things to make in the summer, especially when it’s super hot. You can make them in all kinds of shapes and sizes and all you need is your favorite juice, some water, and sugar.

For these juice pops, I used some of my favorite juice from Red Jacket Orchards. They have really delicious juice in a variety of flavors, all of which make great juice pops! This time I used their grape apple juice as I thought the purple/blue color was a great fit for Stitch. To make these juice pops Stitch shaped, I used molds that I found on Amazon. These molds come in a 2-pack, but are a bit smaller than some of the other molds I’ve used. This recipe makes about 4 medium-large size juice pops, but with these molds (or smaller molds in general), you’ll make closer to 8 juice pops. Since I just have the one set of these molds, I froze my juice pops in batches. You could also use different molds for the leftover juice if you want.

To start, you’ll make a simple sugar syrup. Combine the water and sugar in a small saucepan and bring to a boil. Once it boils, remove the heat and transfer mixture to a heat-safe bowl. Place in the refrigerator to chill for 30 minutes.

Then, combine the chilled sugar syrup with the fruit juice. If you’re making one flavor, combine the full 2 cups of juice with the sugar syrup. If you’re making two flavors, divide the sugar mixture in half and combine each half with 1 cup of fruit juice. Stir to combine.

Since you’ll be transferring the molds to the freezer, I recommend placing the molds on a baking sheet so that they are easy to move around without spilling. For these molds specifically, place them flat on the baking sheet and then place the plastic popsicle sticks into the molds. Fill each mold with juice mixture and then gently place the cover on top.

Freeze for at least 6 hours. To serve, gently pop the juice pops out of the molds and enjoy! Happy 626 Day!

  • cup granulated sugar
  • 2 cups fruit juice

Instructions

Juice Pops

  1. Place water and sugar in a small saucepan and bring to a boil, stirring occasionally to dissolve the sugar.
  2. Remove from heat, transfer to a heat-safe bowl and chill in the refrigerator for 30 minutes.
  3. Place silicone molds on a small baking sheet.
  4. Stir the juice into the chilled sugar syrup and pour into the popsicle molds. If you’re using medium size molds, you have about 4 pops, if you’re using smaller molds, you’ll have closer to 8 pops.
  5. Freeze for at least 6 hours.
