Happy Friday! With the start of the holiday weekend and how hot its been here recently, it really feels like summer. One of my favorite summer treats are popsicles and I’m so excited to share these homemade Mickey & Mickey Juice Pops! Made with fresh fruit juice these orange pineapple Mickey and raspberry apple Minnie shaped pops are refreshing and delicious!

Growing up, popsicles were a summer staple. I have fond memories of sitting out on the porch eating a popsicle or freezer pop with my family. Nowadays, I’ve traded the porch for a fire escape, but the satisfaction of enjoying a popsicle on a hot summer day remains.

These homemade juice pops are super easy to make as the only ingredients are sugar, water, and fruit juice. I used two fruit juices so that I could have two different flavors. The first juice I used was Tropicana’s Orange-Pineapple. I tried it with plain pineapple juice, which was also good, but I preferred the addition of the orange. The second juice I used was Red Jacket’s Raspberry Apple. Their strawberry apple juice is also good. You can definitely use any kind of juice, so feel free to use your favorite!

The only special equipment you’ll need for these are silicone popsicle molds. I found these popsicles molds online. They’re originally from Daiso Japan, which is similar to a dollar store. The molds are being sold in their shops, online store, and some secondhand seller sites. I found four molds: two Mickey, one Minnie, and one gloved hand. I found these molds super easy to use and clean. If you can’t find these specific ones, you can also use another kind of popsicle mold.

To start, you’ll make a simple sugar syrup. Combine the water and sugar in a small saucepan and bring to a boil. Once it boils, remove the heat and transfer mixture to a heat-safe bowl. Place in the refrigerator to chill for 30 minutes.

Then, combine the chilled sugar syrup with the fruit juice. If you’re making one flavor, combine the full 2 cups of juice with the sugar syrup. If you’re making two flavors, divide the sugar mixture in half and combine each half with 1 cup of fruit juice. Stir to combine.

Since you’ll be transferring the molds to the freezer, I recommend placing the molds on a baking sheet so that they are easy to move around without spilling. For these molds specifically, place them flat on the baking sheet and then place the plastic popsicle sticks into the molds. Fill each mold with juice mixture and then gently place the cover on top.

Freeze for at least 6 hours. To serve, gently pop the juice pops out of the molds and enjoy!

  1. Place water and sugar in a small saucepan and bring to a boil.
  2. Remove from heat, transfer to a heat-safe bowl and chill in the refrigerator for 30 minutes.
  3. Place silicone molds on a small baking sheet.
  4. Stir the juice into the chilled sugar syrup and pour into the popsicle molds.
  5. Freeze for at least 6 hours.
