Beauty and the Beast is one of my favorite Disney movies. I love all of the characters but as a reader, who would often spend hours getting lost in a good book, I felt a kinship to Belle and her desire to find adventure in the great wide somewhere. I was so excited when the Be Our Guest restaurant opened at Disney World because I loved the idea of getting to go inside Beast’s castle. Once it opened, it quickly became one of my favorite places to eat in the Magic Kingdom. While I love their savory food, no meal is complete without a taste of the grey stuff.

This cookies and cream mousse is the perfect topping for cookies, cupcakes, and brownies or can just be eaten on its own. In the Magic Kingdom, it’s typically served on a cupcake or cookie, but I decided to serve mine atop some simple brownies. I felt a thin chewy chocolate brownie would be the best for showcasing the mousse, but you could use any kind of brownie. To decorate, I used Wilton’s edible pearl sprinkles in silver and white.

I love the way this mousse turned out and since it tastes so much like the one in the park, it’s a great way to get a bit of Disney magic at home. I can’t wait for you to try the grey stuff, it’s delicious!

The Grey Stuff

Ingredients

Grey Stuff Mousse

  • 3.4 oz instant vanilla pudding mix
  • ½ cup milk
  • 15 regular oreos
  • 2 cups heavy whipping cream, whipped to stiff peaks
  • 3 tablespoons instant chocolate pudding mix
  • 1 teaspoon vanilla extract
  • edible pearl sprinkles

Brownies

  • 5 oz semisweet chocolate chips
  • ½ cup unsalted butter, cut into pieces
  • 2 tablespoons cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • ¾ cups flour
  • ¼ teaspoon salt

Instructions

Brownies

  1. Preheat oven to 350 F and grease a 9 inch cake pan.
  2. Melt chocolate and butter in a double boiler.
  3. Remove chocolate from heat and stir in cocoa powder and sugar.

  4. Whisk in vanilla and eggs, one as time. Beat after each addition.
  5. Stir in flour and salt.
  6. Pour batter into pan and bake for 25-30 minutes.
  7. Cool in pan while you make the mousse.

Grey Stuff

  1. Whisk together vanilla pudding mix, chocolate pudding mix, vanilla, and milk. Chill in the fridge for 5-10 minutes.
  2. Blend oreos in a food processor until fine crumbs.
  3. Using a hand mixer, whip heavy cream until it has stiff peaks.
  4. Remove the pudding mixture from the fridge and mix in the oreo crumbs.
  5. Gently fold in the whipped cream.
  6. Chill mixture in the fridge for 1 hour.

Decoration

  1. While mousse is chilling, use a small round cookie cutter to cut brownies.
  2. Prepare piping bag with a large star tip.
  3. Once chilled, transfer mousse to piping bag and pipe onto brownie rounds.
  4. Add pearl sprinkles and serve.
