My favorite time to go to Disney World is in the late fall. Not only are all the parks decorated for the holidays, but it’s usually warm without being super hot. Breaking from routine, I had the opportunity to go to Disney World last March, and while I was super excited, I was a little underprepared for how hot it was. Luckily, I quickly discovered the delicious cups of frozen lemonade in the park and was instantly refreshed.

This summer has been a hot one and I since I kept thinking about those lemonades, I thought these frozen lemonade inspired cookies would be the perfect way to enjoy these last few weeks before fall. Lemon cookies are one of my favorites and these are sweet and tangy without being overpowering. To remind me of the treats in the parks, I piped small yellow Mickey Mouse ears on top of the regular glaze.

Since it’s still pretty hot here, I decided to make a small batch of frozen lemonade to pair with my cookies and have included that as a bonus recipe for you as well. I hope you these tasty treats keep you cool and refreshed and that you enjoy the last days of summer!

Frozen Lemonade Cookies

Perfectly sweet and tangy!

Ingredients

Cookies

  • 2 ¼ cups flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 2 tablespoons lemon zest
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Glaze

  • 1 ½ cup powdered sugar
  • 2-3 tablespoons lemon juice
  • yellow food coloring

Instructions

  1. Preheat oven to 350 F. Line baking sheets with parchment paper.
  2. In a small bowl, combine flour, baking powder, and salt.
  3. In a medium bowl, combine sugar and lemon zest. Rub together until fragrant.
  4. Add butter to lemon sugar mixture and beat until light and fluffy. Beat in egg and vanilla until smooth.
  5. On low speed, beat in flour mixture. Drop dough by the tablespoon onto prepared baking sheets. Gently flatten each drop of dough with the palm of your hand.
  6. Bake 12-14 minutes or until cookies are just set and slightly golden brown. Cool on baking sheet for 2 minutes before transferring to wire rack to cool completely.
  7. Whisk together powdered sugar and lemon juice. Separate a small amount of glaze and add a few drops of yellow food coloring. Place yellow glaze into a piping bag with a small round tip.
  8. Dip cookies into white glaze and let set. Using the piping bag, pipe small Mickey Mouse ears on each cookie and let dry completely.

Frozen Lemonade

A great summer treat!

Freezing Time 8 hours
Servings 2 slushies

Ingredients

  • 2 quarts water
  • lemonde mix
  • 2 standard ice cube trays

Instructions

  1. Prepare 2 quarts of lemonade as directed by lemonade mix.

  2. Pour lemonade into ice cube trays and freeze overnight. Save leftover lemonade to make the slushies.

  3. Remove ice cubes and place into blender. Add about ½ cup of lemonade. Blend until desired consistency. 

  4. Serve with your favorite Mickey straw!
