Happy Wednesday! I’m getting ready for Easter with Minnie’s Easter Bunny Cakes! These classic vanilla cupcakes have a vanilla frosting, chocolate Minnie ears, candy bunny ears, and Minnie’s bow!

I was looking at the treats available in the Parks for Easter and I really liked the look of the Minnie Mouse Easter Bunny caramel apples. While I do love caramel apples, I tend to think of them as a fall treat and so I used the look as inspiration for these cupcakes. I made these as a classic vanilla cupcakes but any kind of cupcake will work!

This recipe is for a small batch of cupcakes, only six, so you’ll still have plenty of room for treats from the Easter Bunny! While the cupcakes are straightforward to make, they do have a lot of decorations. The only ones that require extra effort are the chocolate candy bows. Since they’ll need time to set, start by making those.

To make the bows, place some purple candy melts in a disposable piping bag or microwave safe bowl. For these, I used Wilton’s lavender candy melts. Heat the candy melts in the microwave, stirring or manipulating with the bag with your hands every 30 seconds until completely melted. If the candy melts are in a bowl, transfer them to a piping bag and then pipe them into a bow shaped candy mold. Place the molds into the refrigerator to set for at least 15 minutes. Once set, pop the bows out of the mold and set aside until ready to decorate.

To make the cupcakes, whisk together the flour, baking powder, and salt in a small bowl. In a medium bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla, beating until combined.Gradually add the flour, beating on low speed. Add the milk and beat until combined. 

Transfer the dough to a 6-cup muffin pan with cupcake liners. I used some fun multicolored liners from Wilton. Bake the cupcakes at 350 F for 15 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. 

While the cupcakes cool, make the frosting by beating the butter until creamy in a medium bowl.Add the powdered sugar, beating on low speed until just combined. Add the milk and vanilla extract. Beat on medium high speed until light and fluffy. Transfer the frosting to a piping bag fitted with a large star piping tip. 

To decorate the cupcakes, pipe a swirl of frosting onto the tops of the cupcakes. Press a purple candy bow into the frosting on the front of each cupcake. Place two white candy melts into the frosting on the sides of each cupcake to make Minnie’s ears. Finally, press two bunny ear candy sprinkles into the frosting on the top of the cupcakes. I used candy bunny ears from Wilton, but you could also make your own out of fondant or paper.

Ingredients

Vanilla Cupcakes

  • cup all-purpose flour
  • ¾ teaspoon baking powder
  • teaspoon salt
  • 3 tablespoons unsalted butter, room temperature
  • cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup milk

Vanilla Frosting

  • ½ cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Decorations

  • bunny ear candy sprinkles
  • white chocolate rounds
  • purple candy melts

Instructions

Candy Bows

  1. Place ½ cup of purple candy melts in a disposable piping bag. Heat in the microwave, manipulating the bag, every 30 seconds until completely melted.
  2. Pipe the candy melts into a bow shaped candy mold. Tap the mold on the counter a few times to release any air bubbles.
  3. Place in the refrigerator for 15 minutes or until solid. Remove the candies from the mold and set aside until ready to decorate.

Vanilla Cupcakes

  1. Preheat the oven to 350 F and line a 6-cup muffin pan with cupcake liners. Set aside.
  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a medium bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla, beating until combined.
  5. Gradually add the flour, beating on low speed. Add the milk and beat until combined.
  6. Transfer the dough to the prepared muffin pan and bake for 15 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
  7. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Vanilla Frosting

  1. In a medium bowl, beat the butter until creamy.
  2. Add the powdered sugar, beating on low speed until just combined.
  3. Add the milk and vanilla extract. Beat on medium high speed until light and fluffy.
  4. Transfer the frosting to a piping bag fitted with a large star piping tip.

Assembly

  1. Pipe a swirl of frosting onto the tops of the cupcakes.
  2. Press a purple candy bow into the frosting on the front of each cupcake.
  3. Place two candy melts into the frosting on the sides of each cupcake to make Minnie’s ears.
