Happy Friday! Spooky Season is upon us and I’m kicking it off with Mickey’s Spooktacular Sundae! Brownie sundaes are one of my favorite and this Halloween version is no exception. This super easy to make sundae has a dark chocolate brownie, pumpkin ice cream, hot fudge, and Oreo Mickey ears!

This week was busy so this recipe is super simple. Typically, I’ll make brownies from scratch but I actually really like Ghirardelli’s brownie mixes and used their Dark Chocolate Brownie Mix for this brownie sundae. If you’d like to make your own brownies, check out my brownie recipe!
To make the brownies, whisk together the water, vegetable oil, and egg in a medium bowl. Add the brownie mix and stir until combined. Transfer the batter to a greased 9×9 metal pan and bake at 325 F for 40-45 minutes.
Let the brownies cool before cutting them into squares.
To assemble the sundaes, place one of the brownies into a bowl. I used some Mickey Ghost bowls from Zak Designs that I found at TJ Maxx. Add a scoop of pumpkin ice cream on top of the brownie. I used Pumpkin Pie ice cream from Adirondack Creamery, but you can use any brand.
Next, drizzle some hot fudge over the top of the ice cream and place two Oreo cookies into the sides to make Mickey ears!

Mickey’s Spooktacular Sundae
A Halloween twist on a classic brownie sundae! Dark chocolate brownies with pumpkin ice cream, hot fudge, and Oreo Mickey ears!
Ingredients
Dark Chocolate Brownies
- 1 box Ghirardelli Dark Chocolate Brownie Mix
- 1/4 cup water
- 1/2 cup vegetable oil
- 1 large egg
Sundae Toppings
- 2 pints pumpkin ice cream
- 1 bottle/jar hot fudge or dark chocolate syrup
- 1 package Oreo cookies
Instructions
Brownies

Preheat the oven to 325 F. Grease a 9×9 inch metal pan.

Whisk together the water, vegetable oil, and egg in a medium bowl. Add the brownie mix and stir until combined.

Transfer the batter to the prepared pan. Bake for 40-45 minutes.

Let the brownies cool before cutting them into small squares.
Sundaes

Place a brownie square into a bowl.

Place a scoop of ice cream on top of the brownie.

Drizzle the ice cream with hot fudge or chocolate sauce.

Add two Oreo cookies to the side of the ice cream to make Mickey ears.
