Happy Friday! It’s Easter Weekend and I’m excited to share Mickey’s Mini Easter Cookies! These mini vanilla cookies are in fun Easter shapes and have colorful sanding sugar! There are so many fun Easter options for Easter treats, but I really love a colorful shaped cookie. Vanilla cookies with sprinkles are some of my favorites and I thought it would be a fun Easter dessert!

To make these cookies, you’ll first make the vanilla cookie dough. In a small bowl, whisk together the flour, salt, and baking soda. In a medium bowl, beat the butter and sugar together until light and fluffy. Then, add the egg and vanilla and beat until combined. 

Gradually add in the flour mixture, beating on low speed, until combined. Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour. On a lightly floured surface, roll out the dough to ¼-inch thickness. Use a selection of mini Easter shaped cookie cutters to cut the dough into shapes. For the Easter shapes, I used a cookie cutter set from Michaels and for the Mickey face, I used a cookie cutter I had from another set.

To make the cookies colorful, sprinkle sanding sugar over the tops of the cookies. I used a set of pastel colors from Wilton, but you can use any colors you’d like! Gently tap off excess the excess sugar and place the cookies onto parchment paper lined baking sheets. Refrigerate the cookies for 15 minutes.

Bake the cookies at 350 F for 8 minutes or until the edges are just starting to brown. Transfer to a wire rack to cool completely. Let the cookies cool on the baking sheet for a couple minutes before transferring to a wire rack to cool completely.

Ingredients

Sugar Cookies

  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Decoration

  • mix of pastel colored sanding sugar

Instructions

  2. In a medium bowl, beat the butter and sugar together until light and fluffy.
  3. Add the egg and vanilla and beat until combined.
  4. Gradually add in the flour mixture, beating on low speed, until combined.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour.
  6. Preheat the oven to 350 F. Line two baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to ¼-inch thickness. Cut into shapes using the mini cookie cutters.

  8. Sprinkle the tops of the cookies with the sanding sugar. Gently shake off any excess.

  9. Place the cookies onto the prepared baking sheets and refrigerate for 15 minutes. This helps the cookies retain their shape.

  10. Bake the cookies for 8 minutes or until the edges are just starting to brown. Let cool for a couple minutes on the baking sheet and then transfer to a wire rack to cool completely.
