Happy Friday! I’m wishing for warmer weather and a trip to Aulani this week and so when this recipe for Aulani’s Tropical Açaí Bowls landed in my inbox, it felt like fate! These refreshing bowls have an açaí smoothie base, a layer of granola, fresh mango, pineapple, and banana, and a smattering of honey and toasted coconut! Just thing to make you feel like you’re on the beach!

This recipe comes together quickly. The hardest part for me was cutting up the mango and I definitely recommend watching a video! Once all of your fruit is cut up, blend the frozen açaí smoothie packets and the açaí juice together in a blender.

Divide the açaí base among four bowls. I used some fun Mickey shaped bowls I got from the Disney Store many years ago. Then, add a layer of your favorite granola and top with a mix of the fresh fruit. As a final touch, drizzle some honey over the top and sprinkle with toasted coconut flakes. I also think some dark chocolate pieces would be a good addition!

Aulani’s Tropical Açaí Bowls

Ingredients

Aulani's Tropical Açaí Bowls

  • 4 3 1/2 ounces frozen açaí packets
  • 1 cup açaí juice, plus more as needed
  • 2 cups granola
  • 2 large bananas, sliced
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 4 tablespoons honey
  • 1/2 cup toasted coconut flakes

Instructions

Aulani's Tropical Açaí Bowls

  1. Combine the frozen açaí packets and juice in a blender and blend until smooth, adding more açaí juice if necessary. Pour into 4 bowls.
  2. Top each bowl of açaí with 1/2 cup granola, half a banana, 1/4 cup diced pineapple and 1/4 cup mango.
  3. Drizzle honey on top and sprinkle with toasted coconut flakes before serving.
