
Mickey's Mini Easter Cookies are mini vanilla cookies in fun Easter shapes with colorful sanding sugar!
On a lightly floured surface, roll out the dough to ¼-inch thickness. Cut into shapes using the mini cookie cutters.
Sprinkle the tops of the cookies with the sanding sugar. Gently shake off any excess.
Place the cookies onto the prepared baking sheets and refrigerate for 15 minutes. This helps the cookies retain their shape.
Bake the cookies for 8 minutes or until the edges are just starting to brown. Let cool for a couple minutes on the baking sheet and then transfer to a wire rack to cool completely.
