Happy Valentine’s Day! No matter who you’re celebrating with today, even if it’s just yourself, there’s always time for a special Valentine’s treat! I’m so excited to share these delicious strawberry Mickey & Minnie Valentine Rice Krispies! These light pink strawberry flavored rice krispie treats are topped with melted white and dark chocolate and sprinkles!

Mickey shaped rice krispie treats are my favorite Disney treat. They have a perfect ratio of cereal and marshmallow and there are so many different toppings and decorations. Another thing I like about them is that they’re easy to make at home and so when I’m feeling a little homesick for Disney, they’re the perfect pick me up!

Typically, I make rice krispies with the regular Rice Krispies cereal, but when I saw the new strawberry flavor, I knew they would be the perfect treat for Valentine’s Day. The cereal itself is light pink and has a light strawberry flavor. I found a box at my local grocery store, but you can also find them at Amazon.

The last time I made rice krispies, I felt like I wanted more marshmallow. This time, I used a whole package of regular size marshmallows, about 12 oz, instead of the recommended 10 oz. While it might not seem like a lot, the extra two ounces definitely gave the krispies the perfect level of gooeyness.

Rice krispies are very straightforward and easy to make. First, start by melting the butter in a large saucepan. You’ll be mixing the cereal into the pan so choose one that will accommodate it. I used a large high-sided pan. Once the butter has melted, mix in the marshmallows, stirring almost constantly so the sugar doesn’t burn. I like to use a silicone spatula sprayed with a little cooking spray to make sure it didn’t stick.

Once the marshmallows are melted, remove the pan from the heat and stir in the strawberry rice krispies. Make sure to stir in the marshmallow from the bottom of the pan so the cereal is evenly coated.

Transfer the mixture to the prepared baking sheet and press it into a flat layer. If you’d like to add sprinkles, freeze-dried strawberries, or any other toppings, sprinkle them on now. I decorated my krispies with a mix of sprinkles, strawberries, and melted chocolate, but you can just do one topping or even leave them completely plain. They’re just as tasty!

After the krispies have cooled, cut them out using a Mickey shaped cookie cutter. I used one from this Mickey cookie cutter set. It’s a nice medium sized cutter. Make sure to spray the cookie cutter with cooking spray so that it doesn’t stick. Place the cut krispies onto a flat surface covered with wax paper.

To add the chocolate decoration, I melted 1 ounce of white chocolate and 1 one ounce of semi-sweet chocolate. There are a couple ways to melt the chocolate. You can use a double boiler or the microwave. When I’m melting a lot of chocolate, I prefer to use a double boiler. However, with just a small amount it was easier to melt it in the microwave at 50% power for about 1 minute 30 seconds. Transfer the melted chocolates to snack size ziplock bags. Cut the end off one corner and pipe over the treats.

Let the chocolate set by leaving the treats at room temperature for about an hour. You can also place them in the refrigerator to help speed up the process.

Ingredients

Rice Krispies

  • 3 tablespoons butter
  • 12 oz regular size marshmallows
  • 6 cups Strawberry Rice Krispies cereal

Decoration

  • 1 ounce white chocolate, broken into pieces
  • 1 ounce semi-sweet chocolate, broken into pieces
  • pink, white, and red sprinkles
  • freeze dried strawberries, chopped into small pieces

Equipment

  • 2 ziplock bags
  • Mickey Mouse cookie cutter

Instructions

Rice Krispies

  1. Spray a 9×13 baking sheet with cooking spray. Set aside.
  2. In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Remove from heat.
  3. Add strawberry rice krispies cereal to marshmallow mixture. Stir until well coated (it helps to coat spatula in a little bit of cooking spray).
  4. Using spatula, press mixture into prepared baking sheet. If desired, sprinkle rice krispies with freeze-dried strawberries or sprinkles. Let cool until krispies reach room temperature.
  5. Spray the cookie cutter with cooking spray and cut out the krispies. Move cut out krispies to a flat surface covered with wax paper. Let rest while you prepare the chocolate coating.
  6. Melt white chocolate using a double boiler or microwave at 50% power for 1 minute 30 seconds or until melted. Stir the chocolate until smooth and transfer to a small ziplock bag. Cut off one of the corners and pipe the chocolate over the rice krispies. Repeat with semi-sweet chocolate.
  7. Let rest at room temperature until set, about an hour.
