Bon Vendredi à tous! After a wonderful trip to the Most Magical Place on Earth, I’m excited to share Les Halles Mousse au Chocolat! Straight from EPCOT’s France Pavilion, this delicious mousse au chocolat is rich, silky smooth, and decadently chocolatey!

In the parks, this mousse au chocolat is served at Les Halles Boulangerie Pâtisserie in EPCOT. Les Halles is one of my favorite places to stop when visiting EPCOT because everything is so delicious! In addition to their jambon beurre baguette sandwiches, some of my favorite treats are the mousse au chocolat and éclairs. With a little help from Remy, I was so excited to make this amazing treat at home!

When I usually make chocolate mousse, I combine a dark chocolate ganache with whipped heavy cream. This recipe, however, is a bit different as it uses egg yolks to thicken the ganache and whipped egg whites to create the mousse. The result is a silky smooth, rich, and chocolately mousse.

To make the mousse au chocolat, place the chopped chocolate in a double boiler over warm water. For this, I used a small pot filled with 2 inches of water and a medium size stainless steel bowl. Stir until the chocolate is melted. Remove from heat. In a large bowl, combine the egg yolks and heavy cream. Gradually add the melted chocolate, stirring rapidly. Once combined, stir in the vanilla extract. Set aside.

Place the egg whites in a large bowl or in the bowl of a stand mixer fitted with the whisk attachment. Beat the egg whites on medium speed until frothy. Add the granulated sugar and beat on medium high speed until stiff peaks form. Gently fold the egg whites into the chocolate mixture.

Once combined, spoon the mousse into individual serving glasses. I used some glass Pyrex custard bowls, but you can use anything that’s refrigerator safe. Chill the mousse in the refrigerator until firm, about 2 hours. At Disney World the mousse is topped with white chocolate crispy pearls, which I was able to find on Amazon. When you’re ready to serve the mousse, sprinkle each serving glass with a handful of the pearls, and a shaving of chocolate, if desired.
