Happy Friday! Summer is here and Goofy is ready for a fishing trip! Straight from EPCOT, I’m excited to share Goofy’s Gone Fishing! This frozen blue raspberry lemonade is filled with colorful candy fish and is perfect for those hot summer days!

As part of Cool Kids Summer, EPCOT is hosting a fun food booth called Grab-n-Goof, which features Goofy inspired snacks for all ages! As fishing is one of Goofy’s favorite summer activities, this one was just too cute to pass up!

To make Goofy’s Gone Fishing, I used Blue Raspberry Lemonade Kool-Aid and multi-colored Swedish Fish! At EPCOT, it’s also served with strawberry boba pearls. But I don’t really like the texture of boba pearls so I omitted them. If you do like them (or if you want an exact match), you can add them to the bottom of the jar!

For the blue raspberry lemonade, first make the Kool-Aid according to the package instructions (1 packet, 1 cup of sugar, and 2 quarts of water). Pour the Kool-Aid into a freezer safe container and freeze for a couple hours to make a slushy consistency. If it gets fully frozen, that’s okay, just let it warm up a bit before using a spoon to break it up!

Scoop the frozen lemonade into a small glass cup or container. I used a clean Oui Yogurt jar since it looked most like the jar used in EPCOT! As you’re filling the jar with lemonade, press some colorful candy fish against the sides of the jar. I used some Mini Swedish Fish for this but you could also use other colorful gummy fish or sharks.

Once assembled, add a straw and enjoy! Happy Summer!
