Happy Friday! Disneyland released some new treats a couple weeks ago and one of them is a S’mores Cereal Treat Bar aka a Rice Krispies Treat with s’mores flavors. I love s’mores and Rice Krispies Treats so I knew I wanted to try to make this at home. It turns out it’s super easy to make and just as delicious as you’d imagine! These copycat Disney Parks S’mores Cereal Treat Bars have a rice krispies treat base that’s topped with graham cracker, milk chocolate drizzle, mini marshmallows, and chocolate Mickey chips!

The most complicated part of this recipe is making the chocolate Mickey chips. I happened to have some leftover from making a batch of Hidden Mickey Banana Muffins so this process was a bit faster for me this week. But if you don’t have any sitting around, just make sure to start your baking process by making them so they have time to set.
For the chocolate Mickey chips, you can use either milk chocolate melting wafers or dark chocolate melting wafers. I had leftover dark chocolate ones, which I used but either flavor will be good. I really like Ghirardelli’s but you can also use Wilton or another brand. To make the Mickey shapes, I used silicone molds made by Daiso. I’m not sure if they still have them in store, but they’re usually available on other retail sites. Amazon also has some alternative molds that would work.
Place the cocoa candy melts in a disposable piping bag. Heat in the microwave, checking every 30 seconds until melted. Pipe the cocoa candy melts into the silicone mold. Once filled, tap the mold on the counter to clear out any air bubbles. If you don’t have a piping bag, you could also just melt them in a bowl and then spread them into the mold. It’s a little messier, but will work. Scrape off any excess chocolate using an off-set spatula. Place the filled mold into the refrigerator to harden, about 15 minutes. Once set, pop out the chocolate Mickeys and store in an airtight container until ready to use.
If you have extra Mickey chips, you can use them for other recipes, such as my Hidden Mickey Banana Muffins, or Mickey Chip Cookies.
Next, make the rice krispies treats. First spray an 8 x 11 inch baking sheet or glass baking dish with cooking spray. You could also use a larger baking dish or baking sheet, the rice krispies might just end up a bit thinner.
In a large pot, melt butter over low heat. Once butter has melted, add the marshmallows and stir until completely melted. Remove from heat. Add the rice krispies cereal to the marshmallow mixture. Stir until well coated (it helps to coat spatula in a little bit of cooking spray).
Using the spatula, press mixture into the prepared baking sheet or baking dish. Let cool until the krispies reach room temperature. Once easy to handle, use a large sharp knife to cut the rice krispies into three pieces lengthwise (use a full graham cracker to determine the width). Cut those pieces in half.
While the rice krispies are cooling, melt some milk chocolate melting wafers or milk chocolate chips in the microwave, stirring every 30 seconds. Transfer the melted chocolate to a piping bag. Since s’mores are typically made with milk chocolate, I used milk chocolate chips for this. But, if you prefer dark chocolate you can definitely swap the milk chocolate out for dark chocolate.
To assembly the treats, place one rice krispies treat on a pice of wax paper. Pipe a drizzle of melted chocolate on top of it. Then, place one full graham cracker on top of the chocolate. I found it nice to break the graham cracker in half, as it made it easier to cut the treat in half if needed.
Next, pipe another chocolate drizzle on top of the graham cracker. Add a handful of mini marshmallows on top of it. Pipe a final chocolate drizzle on top of the marshmallows and then place a handful of Mickey pieces on top of the marshmallows.

Ingredients
Rice Krispies
- 3 tablespoons unsalted butter
- 12 oz regular size marshmallows
- 6 cups Rice Krispies cereal
Chocolate Mickey Chips
- 4 ounces milk or dark chocolate candy melts
- mini marshmallows
Decoration
- 4 ounces milk chocolate candy melts or milk chocolate chips
- 6 full graham crackers
Equipment
- piping bags
- Mickey Mouse silicone mold
Instructions
Chocolate Mickey Chips

Place chocolate candy melts in a disposable piping bag. Heat in the microwave, checking every 30 seconds until melted.

Pipe the chocolate candy melts into the silicone mold. Once filled, tap the mold on the counter to clear out any air bubbles.

Break the graham crackers in half.

Melt 4 ounces of milk chocolate candy melts or milk chocolate chips in the microwave, stirring every 30 seconds. Transfer to a piping bag.
Assembly

Place one rice krispies treat on a piece of wax paper.

Pipe a drizzle of chocolate over the top of the rice krispie treat. Gently press two pieces of graham cracker on top of the chocolate drizzle, to cover the top of the rice krispie treat.

Pipe another drizzle of chocolate over the top of the graham crackers. Place a handful of mini marshmallows on top of the chocolate, making sure they touch the chocolate so they stick.

Pipe another drizzle of chocolate over the top of the marshmallows. Place a handful of chocolate Mickey chips on top of the marshmallows.
