Happy October! With the start of October, I finally feel like it’s time for Halloween decorations and spooky treats. This month’s recipes will be Halloween themed and I’m so excited to kick it off with these delicious candy corn rice krispies! As I mentioned in a previous rice krispies post, Mickey Mouse rice krispies are my favorite treat at Disney World. Whenever I go, I always end up bring home a handful. While there’s nothing quite like a treat fresh from the parks, these homemade treats do bring a taste of the magic home. These Mickey and Minnie rice krispies are coated with white chocolate, orange and yellow sanding sugar, sprinkles, M&Ms, and candy corn!
To make the rice krispies, first melt the butter and marshmallows in a large saucepan. Add the rice krispies cereal and mix until the cereal is well coated with marshmallow.
Pour the cereal mixture onto a greased baking sheet or glass baking dish. Press into a layer about 1-2 inches thick and let cool to room temperature.
Once the krispies have cooled, use a Mickey shaped cookie cutter to cut out the Mickey shapes. Make sure to spray the cutter with cooking spray so that the krispies don’t stick to it. For my krispies, I used two sizes of Mickey cutters–a large size that I purchased in the parks and a smaller one made by Wilton.
I decided to do a mix of large and small krispies, but you can use whatever size works best for you. I found the small krispies to be a nice snack or kid size treat.
Place the cut krispies on a sheet of wax paper while you prepare the decorations. The main decoration for these krispies are sprinkles. Therefore, I added a layer of white chocolate to hold them in place.
Melt the white chocolate in the double boiler. For my treats, I used a 4 ounce bar of Ghirardelli white chocolate, which I broke into pieces. If you can’t find a bar, white chocolate chips will also work. Use a small rubber spatula to coat the top of each treat with the melted chocolate.
Starting at bottom of the treat, gently pour the orange sanding sugar to coat the bottom third of the treat. Pour a layer of yellow sanding sugar just above the orange sugar. Gently pick up and shake off the excess sugar.
To make the Mickey treats, use two orange candies to create the buttons. For the larger treats, I used orange M&Ms and for the smaller treats, I used orange ball sprinkles. To make the Minnie treats, add two pieces of candy corn to the top of the treat to create a bow.
Transfer the treats to a wax paper lined baking sheet and place in the refrigerator to set, about 30 minutes.

Candy Corn Mickey & Minnie Rice Krispies
Ingredients
Rice Krispies
- 3 tablespoons unsalted butter
- 10 oz regular size marshmallows
- 6 cups Rice Krispies cereal
Decorations
- 4 ounces white chocolate, broken into pieces
- yellow sanding sugar
- orange sanding sugar
- orange ball sprinkles
- orange M&Ms
- candy corn
Instructions

Spray a 9×13 baking sheet or glass dish with cooking spray. Set aside.

In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Remove from heat.

Add cereal to marshmallow mixture. Stir until well coated (it helps to coat spatula in a little bit of cooking spray).

Using spatula, press mixture into prepared baking sheet. Let cool until krispies reach room temperature.

Spray a cookie cutter with cooking spray and cut out the krispies. Move cut out krispies to second baking sheet covered with wax paper. Let rest while you prepare the chocolate coating.

Melt white chocolate using a double boiler. When the chocolate is smooth and melted, use a small rubber spatula to coat the tops of the rice krispies with chocolate.

Starting at the bottom of the Mickey head, sprinkle the orange sanding sugar onto the krispies.

Sprinkle the yellow sanding sugar in a medium size line just above the orange sprinkles.

Gently lift each krispie and shake off the excess sanding sugar.

To make Mickey krispies, add two orange buttons above the yellow sugar. Use M&Ms for the large rice krispies and ball sprinkles for the small rice krispies.

To make Minnie krispies, add two pieces of candy corn to the center of the head to make a bow.

Place decorated krispies in the refrigerator to set for at least 30 minutes.
