Happy International Waffle Day! I always love an excuse to break out my Mickey Mouse waffle maker and since today is all about making waffles, I’m excited to share these Banana Bread Mickey Waffles! These waffles are just like regular banana bread but bake a lot faster. They’re perfect for a quick breakfast, snack, or dessert. Add in some chocolate chips or top with a drizzle of Nutella for an extra special treat!

For this recipe, I basically used my regular banana bread recipe and just baked it in my waffle maker. I used this Mickey Mouse waffle maker, which makes six waffles at a time. It’s my favorite waffle maker as the waffles are just like the Mickey waffles you can find at the Disney Parks. I bought mine online at ShopDisney, but I’ve also seen it online at Boxlunch, Hot Topic, and Select Brands. If you don’t have this exact waffle maker, that’s okay! Just use whatever kind you have.

To make these Banana Bread Mickey Waffles, first preheat your waffle maker and spray the molds with cooking spray. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside while you prepare the wet ingredients.

In a medium bowl, combine the bananas, eggs, butter, and vanilla. Using a spatula, fold the wet ingredients into the dry ingredients, mixing until incorporated. If you want to add any mix-ins (chocolate chips, nuts, etc.) stir those in now. I really love chocolate chip banana bread and so I made half of my waffles plain banana bread and then mixed some chocolate chips into the remaining batter.

Bake the waffles according to the instructions on your waffle maker. They should be golden brown and cooked though. Enjoy them plain, or warm some Nutella in the microwave and add a drizzle to the top of the waffles!

Ingredients

Banana Bread Mickey Waffles

  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract

Mix-ins/Toppings

  • ¼ cup chocolate chips
  • ¼ cup nutella, warmed

Instructions

Banana Bread Mickey Waffles

  1. Preheat Mickey Mouse waffle maker and spray with cooking spray.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a medium bowl, combine the bananas, eggs, butter, and vanilla.
  4. Using a spatula, fold the wet ingredients into the dry ingredients, mixing until incorporated. If desired, stir in chocolate chips.
  5. Place a spoonful of batter into each Mickey shaped mold in the waffle maker. Bake according to waffle maker instructions.
  6. If desired, drizzle warmed Nutella over the top of the waffles.
