Happy St. Patrick’s Day! While I was thinking about some fun leprechaun themed treats, I came across an adorable book called Little Man of Disneyland. It was written while Disneyland was being built, and it tells the story of Patrick Begorra, a leprechaun, who lives in a tree on the land that will become Disneyland. After reading the book, I decided to make Patrick Begorra’s Leprechaun Chow. This colorful leprechaun chow has chocolate peanut butter muddy buddies, white chocolate cheerios, golden grahams, m&ms, and magically delicious marshmallows!

Similar a sweet Chex mix or puppy chow, this leprechaun chow is a combination of different cereals and sweet mix-ins. Most of the mix-ins are ready to go straight from the box, but there are two elements (the muddy buddies and white chocolate cheerios) that need a bit more prep work before being added into the mix.

To start, make the muddy buddies. For these, I used Corn Chex cereal but you could also use Rice Chex if you prefer. First cover three baking sheets with wax paper. You’ll use two for the muddy buddies and one for the cheerios. Place the corn chex in a large bowl and the peanut butter and chocolate chips in a small heat-safe bowl. Heat the peanut butter and chocolate chips in the microwave, stirring every 30 seconds until melted. Stir to combine and then pour over the corn chex, tossing with a spatula until it’s evenly coated.

Next, you’ll coat the chocolate covered corn chex with a mixture of powdered sugar and cocoa powder. If you have a two gallon ziploc bag, you can do this all at once. I only have gallon bags, so I did this in two batches. Place 1/2 cup powdered sugar and 1/2 tablespoon unsweetened cocoa powder in a 1 gallon ziploc bag. Seal the bag and shake to combine. Add half of the corn chex, seal the bag, and shake until evenly coated. Pour the corn chex on one of the prepared baking sheets, and repeat this process with the second half of the corn chex. Let the corn chex rest until set.

While the corn chex is resting, make the white chocolate covered cheerios. Place the Cherrios cereal in a medium size bowl and the white chocolate melting wafers in a small heat-safe bowl. For these, I used Ghirardelli Melting Wafers, but you could also use Wilton Candy Melts. Heat the melting wafers in the microwave, stirring every 30 seconds, until melted. Pour the chocolate over the cheerios, and working quickly, toss with a spatula until they’re evenly coated. Transfer to a prepared baking sheet and spread the cheerios into a single layer. Once they’ve set, gently break the cheerios off of the baking sheet and breakdown any large clumps.

The rest of the mix-ins are very straightforward as they’re added straight from the box. This includes the Golden Grahams, M&Ms, and magically delicious marshmallows. For the M&Ms, I used the green, yellow, and orange colored M&Ms from a sharing size bag. I found these Lucky Charms Jet-Puffed marshmallows at my local grocery store and thought they would be the perfect addition. These marshmallows are more of a regular size marshmallow, not the small dried out marshmallows in the cereal.

To assemble Patrick Bogerra’s Leprechaun Chow, place the muddy buddies, the white chocolate cherrios, the Golden Grahams, M&Ms, and marshmallows in a large bowl. Gently stir to combine.

Patrick Begorra’s Leprechaun Chow

Ingredients

Muddy Buddies

  • 6 cups Corn Chex cereal
  • 1 cup semisweet chocolate chips
  • ½ cup creamy peanut butter
  • 1 cup powdered sugar, divided
  • 1 tablespoon unsweetened cocoa powder, divided

White Chocolate Covered Cheerios

  • 2 ½ cups Cheerios
  • 7 ounces white chocolate melting wafers
  • 1 teaspoon vegetable oil

Mix-Ins

  • 2 cups Golden Grahams Cereal
  • 1-2 cups yellow, green, and orange M&Ms
  • 1-2 cups Lucky Charms Jet-Puffed marshmallows

Instructions

Muddy Buddies

  1. Line two baking sheets with wax paper. Set aside.
  2. Place the corn chex cereal in a large bowl. Set aside.
  3. Combine the chocolate chips and peanut butter in a small heat-safe bowl. Microwave until melted, stirring every 30 seconds. Stir until smooth.
  4. Pour the peanut butter chocolate mixture over the cereal and use a spatula to toss until fully coated.
  5. Place 1 cup of powdered sugar and ½ tablespoon of cocoa powder in a gallon ziploc bag. Seal the bag and shake to combine.
  6. Add half of the cereal mixture to the ziploc bag, seal the bag and shake to coat.
  7. Pour the cereal out onto the prepared baking sheet and let set.
  8. Repeat steps 5-7 with the second half of the cereal mixture.

White Chocolate Covered Cheerios

  1. Line a baking sheet with wax paper. Set aside.
  2. Place cheerios in a medium bowl. Set aside.
  3. Place white chocolate melting wafers in a heat-safe bowl. Microwave until melted, stirring every 30 seconds.
  4. Pour the white chocolate over the cheerios and stir until coated.
  5. Pour the cheerios onto the prepared baking sheet and spread into a single layer. let set.
  6. Once set, gently break the cheerios off of the wax paper and break down any large clumps.

Assembly

  1. In a large bowl, combine the muddy buddies, the white chocolate covered cheerios, the golden grahams, M&Ms, and marshmallows.
  2. Stir to combine.
