Happy National Waffle Day! One of my favorite Disney Parks foods are Mickey Waffles and there’s no better way to celebrate National Waffle Day than with some Mickey Waffles at home! These light and fluffy Strawberry Mickey Waffles are packed with fresh strawberries and are topped with a Nutella drizzle!

Found all over the Disney Parks and the Disney Cruise Line, Mickey waffles make the perfect breakfast or quick snack. I love the miniature size of them as it makes it really easy to pick them up and eat on the go. Just like any waffles, there flavor possibilities are endless!

This recipe will work with other waffle makers, but if you want to re-create the waffles found in the parks, you’ll want to use the Disney Mickey Mouse Double Flip Waffle Maker by Select Brands. It is expensive for a waffle maker, but it’s great quality, cooks six waffles at a time, and they’re the exact size and shape of the waffles found in the parks. I bought mine from ShopDisney a few years ago (where it’s not currently in stock) but it’s still available from a variety of retailers online including Select Brands, Amazon, and Williams Sonoma.

To make these waffles, start by preheating your waffle maker according to its instructions. It sometimes helps to spray a little non-stick cooking spray inside the molds after it’s preheated as well.

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and sugar. Set aside.

In a separate bowl, beat the egg and butter together. Add the buttermilk and beat until combined. Add the egg mixture to the flour mixture and beat until combined. For these steps, I used an electric hand beater, but you can also use a regular whisk.

Add the fresh strawberries and stir just until incorporated. Let the batter rest for 4-5 minutes. Transfer the batter to the waffle maker and cook according to the waffle maker instructions.

  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder

  • 2 tablespoons granulated sugar
