Happy Friday! While summer is winding down, there’s still a few weeks left to enjoy a classic summer treat – popsicles! My favorite kind of popsicle is actually a creamsicle, which is orange and vanilla flavored and so I used that inspiration for these Mickey and Minnie Creamsicles! Made with fresh orange juice and vanilla yogurt, they’re a creamy and refreshing summer treat!

Mickey and Minnie Creamsicles

These creamsicles come together very quickly but do need time to freeze. For these creamsicles, I used Mickey and Minnie shaped popsicle molds made by Daiso. I purchased mine a couple years ago, but they still sometimes pop up on Daiso’s website and on selling sites like eBay and Mercari. This recipe will also work with other popsicle molds, so if you can’t find these specifically, you can use your own molds.

First, start by making a sugar syrup. Place the sugar and water in a small saucepan. Bring the mixture to a boil, stirring until the sugar has dissolved. Transfer the sugar mixture to a heat safe bowl or measuring cup and place in the refrigerator for 30 minutes. 

Once the sugar mixture has chilled, stir the sugar mixture into the orange juice. Place the juice pop molds onto a small baking sheet. This will make it easier to transfer them to the freezer later. Next, place a few dollops of vanilla yogurt into each juice pop mold. Pour the orange juice mixture into the molds, filling each to the top. Finally, place the juice pop molds into the freezer and freeze until solid, about 6 hours.

Gently pop the creamsicles out the molds and enjoy!
