Happy Friday! The new Lilo & Stitch movie releases today and I’ve made these Stitch Cupcakes to celebrate! Inspired by Stitch, these rich chocolate cupcakes are topped with blue buttercream frosting and fondant ears!

Stitch Cupcakes (chocolate cupcakes with blue frosting and fondant Stitch ears)

To make the cupcakes, combine the sugar, flour, baking soda, baking powder, salt, and cocoa powder in a medium bowl. Add the egg, milk, oil, and vanilla extract and beat on medium speed until fully combined, about 2 minutes. Stir in the boiling water. The batter will be thin and runny, don’t worry!

Pour the batter into a muffin pan lined with cupcake wrappers. For these, I used blue cupcake wrappers but you could use any that you like. Bake the cupcakes at 350 F for 15 minutes or until a cupcake inserted in the center comes out clean. Cool the cupcakes in the pan for 10 minutes before transferring them to a wire rack to cool completely.

While the cupcakes are cooling, prepare the frosting and fondant ears. To make the fondant ears, roll out a couple ounces of the blue fondant and the pink fondant. Place the pink on top of the blue and gently roll them together to adhere. Use a sharp knife to cut out 24 ovals. Cut out triangle notches to match Stitch’s ears and gently press them together at the end. Let rest while you make the frosting.

To make the frosting, beat the butter in a medium bowl until smooth. Add the powdered sugar, milk, and vanilla extract, and beat until combined. Then, beat the frosting on high speed until light and fluffy. Stir in a few drops of blue gel food color until the color is completely distributed. Transfer the blue frosting to a piping bag fitted with a large star piping tip.

To assemble the cupcakes, first pipe a swirl of blue frosting onto the top of each cupcake. Gently press two fondant ears into the frosting on each side of the cupcake to make Stitch’s ears.

Chocolate Cupcakes

  • 1 cup granulated sugar
  • ½ cup + 6 tablespoons all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup boiling water

Buttercream Frosting

  • ¾ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¾ teaspoon vanilla extract
  • 3 tablespoons milk
  • blue gel food coloring

Decoration

  • blue fondant
  • pink fondant

Equipment

  • large star piping tip
  • piping bag

Instructions

Chocolate Cupcakes

  1. Preheat the oven to 350 F. Line a muffin pan with cupcake liners.
  2. In a large bowl, combine the sugar, flour, baking soda, baking powder, salt, and cocoa powder.
  3. Add the egg, milk, oil, and vanilla extract and beat on medium speed until fully combined, about 2 minutes.
  4. Stir in the boiling water. The batter will be thin and runny.
  5. Pour the batter into the prepared muffin pan and bake for 15 minutes or until a toothpick inserted into the center of the cupcake comes out clean.
  6. Cool cupcakes in the pan for 10 minutes before transferring to a wire rack to cool completely.

Buttercream Frosting

  1. In a medium bowl, beat the butter until smooth.
  2. Add the powdered sugar, milk, and vanilla extract, and beat until combined.
  3. Beat on high speed until light and fluffy.
  4. Stir in a few drops of blue gel food color until the color is completely distributed.

  5. Transfer the blue frosting to a piping bag fitted with a large star piping tip.

Fondant Ears

  1. Roll out a couple ounces of the blue and pink fondant.

  2. Place the pink fondant on top of the blue fondant and gently roll together to adhere.

  3. Use a sharp knife to cut out 24 ovals. Cut out notches in the sides of the ovals to match Stitch's ears. Gently press the ends together.

  4. Set aside until ready to decorate.

Assembly

  1. Pipe a swirl of blue frosting onto the top of each cupcake.
  2. Gently press two fondant ears into the frosting on each side of the cupcake.
