Happy Friday! Halloween is almost here and I’m excited to share this Spooky Mickey Bubble Waffle Sundae! I love my Mickey Bubble Waffle maker from Select Brands and this week I tweaked my recipe to add some spookiness. These black chocolate waffles pair perfectly with green mint ice cream and Halloween sprinkles for a decadently spooky treat!
Bubble waffles are a bit different from regular waffles. They’re lighter and sweeter and have a crispy outside and a fluffy inside. While you can enjoy them with a variety of topics, but I love serving them as part of a sundae with ice cream and fruit.

Since bubble waffles are different from regular waffles, you’ll need a bubble waffle maker for this recipe. The Mickey Bubble Waffle Maker that I’m using was gifted to me by Select Brands as part of a promotion. Select Brands makes a variety of fun and good quality kitchen appliances, including my favorite Mickey Waffle Maker that makes mini waffles just like the ones available in the Parks.
The Mickey Bubble Waffle Maker is available on the Select Brands website. I’ve really enjoyed using mine to make a bunch of different flavored bubble waffles and I definitely recommend it. If you’re looking to make non-Mickey bubble waffles, you could also use a regular bubble waffle maker for this recipe. To make the batter, first whisk together the four, sugar, tapioca starch, cornstarch, baking powder, cocoa powder, and salt in a large bowl. In a medium bowl, whisk together the eggs, water, syrup, oil, and vanilla extract.
Pour the egg mixture into the flour mixture and whisk until smooth. Bubble waffle batter is thinner than regular waffle batter so the batter will be runny! Cover the batter and rest at room temperature for one hour. Depending on when you’d like to serve the waffles, you could also have the batter rest in the refrigerator overnight.
When you’re ready to make the waffles, preheat the bubble waffle maker according to the instructions. For the Mickey Bubble Waffle Maker, this means plugging it in and waiting until the light goes off. This only takes a couple minutes. I found that the Mickey Bubble Waffle Maker didn’t need any cooking spray or oil to grease the irons.
Filling the bubble waffle maker is different than filling a regular waffle maker. After a bit of trial and error, I found it easiest to use a ¾ cup measure to pour the batter into the center of the waffle maker. Then, I tilted the waffle maker slightly to distribute the batter to the edges of the irons.
Cook the waffles according to the waffle maker instructions. For the Mickey Bubble Waffle Maker, you’ll need to rotate the irons and let it cook for 2 minutes. While the light will go on and off to help you time it, I found it easier to use a kitchen timer. Once cooked, rotate the irons back to the starting position and remove the bubble waffle from the waffle maker.
While you can definitely eat the bubble waffles plain, I served mine with green mint chip ice cream and an assortment of Halloween sprinkles from Wilton. To assemble the waffles, curve the bubble waffle and place it into a waffle or fry holder, or paper waffle holder. Some paper waffle cups are included with the Mickey Bubble Waffle Maker!
Place a couple scoops of the mint chip ice cream into the center of the waffle. Then, add the Halloween sprinkles on top of the ice cream. You could also add some chocolate Pocky!

Enjoy a spooktacular treat with Spooky Mickey Bubble Waffle Sundae! These black chocolate waffles are filled with mint chip ice cream and Halloween sprinkles!
Ingredients
Black Chocolate Bubble Waffles
- 1 ¼ cups cake flour
- ½ cup granulated sugar
- ½ cup black cocoa powder
- ¼ cup tapioca starch
- 2 tablespoons cornstarch
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 2 large eggs
- 1 ¼ cups water
- ¼ cup maple syrup
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
Toppings
- green mint chip ice cream
- Halloween sprinkles
- Pocky

Instructions

Preheat the bubble waffle maker according to the instructions.

Use a ¾ cup measure to pour the batter into the center of the waffle maker. Tilt the waffle maker slightly to distribute the batter to the edges of the irons.

Cook according to waffle maker instructions. For the Mickey Bubble Waffle Maker, this is about 2 minutes.

Remove the bubble waffle from the waffle maker.
Assembly

Place a bubble waffle into a cup or paper waffle cone so that is curved into a cone shape.

Add a few scoops of ice cream, a handful of fresh berries or other fruit, and a couple of Pocky sticks.
