Spooky Mickey Bubble Waffle Sundae

Ingredients

Black Chocolate Bubble Waffles

  • 1 ¼ cups cake flour
  • ½ cup granulated sugar
  • ½ cup black cocoa powder
  • ¼ cup tapioca starch
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 ¼ cups water
  • ¼ cup maple syrup
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract

Toppings

  • green mint chip ice cream
  • Halloween sprinkles
  • Pocky

Instructions

Black Chocolate Bubble Waffles

  1. In a large bowl, whisk together the four, sugar, tapioca starch, cornstarch, baking powder, cocoa powder, and salt.

  2. In a medium bowl, whisk together the eggs, water, syrup, oil, and vanilla extract.
  3. Pour the egg mixture into the flour mixture and whisk until smooth. The batter will be runny.
  4. Cover the batter and rest at room temperature for one hour (or rest in the refrigerator overnight).
  5. Preheat the bubble waffle maker according to the instructions.
  6. Use a ¾ cup measure to pour the batter into the center of the waffle maker. Tilt the waffle maker slightly to distribute the batter to the edges of the irons.
  7. Cook according to waffle maker instructions. For the Mickey Bubble Waffle Maker, this is about 2 minutes.
  8. Remove the bubble waffle from the waffle maker.

Assembly

  1. Place a bubble waffle into a cup or paper waffle cone so that is curved into a cone shape.
  2. Add a few scoops of ice cream, a handful of fresh berries or other fruit, and a couple of Pocky sticks.
