Happy Saturday! It’s summer and for me that means s’mores season! I’m excited to share a mash up of two of my favorite things: s’mores and Mickey waffles! These S’mores Mickey Waffles are made with classic Mickey waffles, toasted marshmallows, and milk chocolate. The perfect summer dessert!
To keep these as close to the Parks as possible, I used my Mickey Double Flip Waffle Maker from Select Brands. I love this waffle maker as it makes perfect waffles every time I use it. You can find it on the Select Brands website (and they also have a version with Mickey and Minnie, which is adorable!).

For the waffle batter, I used Golden Malted Waffle Mix, which is the waffle mix used at the Disney Parks. While I typically make my own batter, I liked how crispy these waffles were and the slightly malty flavor reminded me a bit of a graham cracker. It was also fun to have the waffles exactly like the ones I eat at Disney! I used one cup of mix and made it as recommended on the package. From one cup of batter, I made about 12 Mickey shaped waffles, which turned into 6 s’mores.
To make them into s’mores, I placed half of the waffles on a baking sheet and then topped them with marshmallows. I used the flat s’mores style marshmallows from Jet-Puffed, but the regular shaped marshmallows will also work! I then toasted them by putting the marshmallow topped waffles under the broiler in my oven.
Once the marshmallows are warm and toasted, remove them from the oven and press a piece of milk chocolate into the marshmallow. I went classic s’mores for this and used sections of Hershey bars. Finally, press a second Mickey waffle on top of the chocolate to make the final s’mores. You’ll need to work somewhat quickly to assemble these. If anything gets too cool, just give it a quick zap in the microwave!

S’mores Mickey Waffles
Ingredients
Mickey Waffles
- 1 cup Golden Malted Waffle Mix
- 2/3 cup water
- 1 large egg
- 2 tablespoons unsalted butter, melted
S’mores Filling
- 6 marshmallows
- 2 Hersey bars, broken into quarters

- Mickey waffle maker
Instructions
S’mores Mickey Waffles

In a medium bowl or large measuring cup, whisk together the water and egg. Add the waffle mix and whisk until smooth. Stir in the melted butter.

Prepare the waffles according to your waffle maker’s instructions.

Turn the oven’s broiler onto high.

Place 6 of the waffles onto a foil lined baking sheet. Place a marshmallow on top of each of the waffles.

Place the baking sheet under the broiler and broil until the marshmallows are warm and toasted.

Press a piece of chocolate on top of the marshmallow and then press a second waffle onto the chocolate.

Serve immediately. If any piece feels too cool, give the s’mores a quick warm up in the microwave.
