Mickey waffles are one of my favorite things to make and these pumpkin chai waffles are perfect for fall! For this recipe, I used my favorite Mickey Double Flip Waffle Maker from SelectBrands. I love this waffle maker because it’s such a great quality and the waffles look exactly like the ones in the parks!

First, preheat the waffle maker. Since this makes a good amount of waffles, also preheat the oven to 200 F. Line a baking sheet with parchment paper and set aside. This will be to keep the cooked waffles warm as you’re working.

Next, make the batter by whisking together the flour, baking powder, baking soda, cinnamon, ginger, allspice, nutmeg, cloves, and salt in a medium bowl. In a large bowl, use a hand beater to beat the eggs until frothy. Add the pumpkin, butter, brown sugar, maple sugar, vanilla, and milk. Beat on medium speed until combined. Finally, add the flour mixture to the egg mixture and beat on low speed until combined.

Pour a couple spoonfuls of batter into each well of the Mickey shaped waffle maker. Cook the waffles for about 5 minutes, until they’re crisp and golden around the edges. Remove the waffles from the waffle maker and transfer to the baking sheet. Place the baking sheet in the oven to keep warm. Repeat the steps with remaining batter.

To make the chai spiced sugar, whisk together the sugar, cinnamon, ginger, allspice, cardamom, and cloves in a shallow bowl. Remove a waffle from the baking sheet and use a pastry brush to coat both sides of it with melted butter.

Place the butter coated waffle in the chai spiced sugar and roll it around until it’s fully coated. Return waffle to the baking sheet to keep warm. Repeat the steps for all of the waffles.
