Pumpkin Chai Mickey Waffles

Ingredients

Pumpkin Spice Waffles

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoons allspice
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 3 large eggs, room temperature
  • 1 cup pumpkin puree
  • ¼ cup unsalted butter, melted
  • ¼ cup dark brown sugar
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole milk, room temperature

Chai Spiced Sugar

  • 2/3 cup granulated sugar
  • 4 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon allspice
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground cloves
  • 1/2 cup unsalted butter, melted

Instructions

Pumpkin Spice Waffles

  1. Preheat the waffle maker. Preheat the oven to 200 F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, allspice, nutmeg, cloves, and salt.
  3. In a large bowl, use a hand beater to beat the eggs until frothy. Add the pumpkin, butter, brown sugar, maple sugar, vanilla, and milk. Beat on medium speed until combined.
  4. Add the flour mixture to the egg mixture and beat on low speed until combined.
  5. Pour a couple spoonfuls of batter into each well of the Mickey shaped waffle maker. Cook the waffles for about 5 minutes, until they’re crisp and golden around the edges.
  6. Remove the waffles from the waffle maker and transfer to the baking sheet. Place the baking sheet in the oven to keep warm. Repeat the steps with remaining batter.

Chai Spiced Sugar

  1. In a shallow bowl, whisk together the sugar, cinnamon, ginger, allspice, cardamom, and cloves.
  2. Remove a waffle from the baking sheet and use a pastry brush to coat both sides of it with melted butter.
  3. Place the butter coated waffle in the chai spiced sugar and roll it around so that it’s fully coated. Return waffle to the baking sheet to keep warm. Repeat the steps until all waffles are coated.
