Today A Goofy Movie celebrates its 25th anniversary! One of my favorite parts of A Goofy Movie (besides Goofy and Max) is Powerline. It’s been years since I actually watched the movie, but I often find myself randomly singing I2I–it’s such a catchy song! So, to celebrate, I made these super fun Powerline inspired cupcakes! These lemon stand out cupcakes are topped with electric yellow lemon buttercream, sparkling pink and purple sprinkles, and fondant decorations!
When I think of Powerline, I immediately think of brightness and yellow. And so, I felt like lemon would be the perfect flavor for these cupcakes. I really love lemon cake and these cupcakes are a nice balance of tart and sweet. Combined with the lemon buttercream, it’s perfect!
For these cupcakes, you’ll start by combining the dry ingredients. Set those aside and beat the butter and sugar until light and fluffy. Add the eggs and vanilla and then gradually add the dry ingredients and beat until combined. Add the milk, lemon juice, and zest and beat until combined. I definitely recommend using fresh lemons for both the cake and the frosting as they add a great lemon flavor that isn’t overpowering.
Fill each cupcake liner in your prepared muffin pan about 2/3 full. Since I wanted a very yellow cupcake, I used these yellow polka dot cupcake liners. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan briefly before transferring to a wire rack to cool completely.
While the cupcakes are cooling, make the frosting and the fondant decorations. For the frosting, beat the softened butter until creamy, add the powdered sugar, milk, lemon juice, a few drops of yellow food coloring, and beat until fluffy. If it’s too thick, add a bit more milk and if it’s not thick enough, add more powdered sugar. If you want more lemon flavor, add more lemon juice. Transfer the frosting to a large piping bag fitted with a large star tip. Set aside until ready to decorate.
After making the frosting, move on to the fondant decorations. To fit the Powerline theme, I made yellow fondant lightning bolts, white circles with Powerline’s logo, and black music notes.
To make the decorations, first prepare lightly dust a flat surface with powdered sugar. Roll out a bit of black fondant and cut into music note shapes. I used a sharp knife to cut them out free-hand but you can also look for small shaped fondant or vegetable cutters in the shapes you’d like. Place the cut out music notes on a piece of wax paper and set aside while you make the rest.
Next, take some white fondant and rolled it out on your flat surface lightly dusted with powdered sugar. Using a small round cutter, cut into circles and set on a piece of wax paper. These will become the logo decorations. Using a black, food safe, edible marker, draw the Powerline logo onto the white fondant circles. Let sit while you make the lightning bolts.
Take some white fondant, and dye it yellow with a couple drops of gel food coloring. Mix the color in using your fingers and then roll out on a surface lightly dusted with powdered sugar. The fondant will become a bit stickier when adding the food coloring. Using a sharp knife, cut out lightning bolt shapes.
The last part of these stand out cupcakes is the sprinkles. Since Powerline’s secondary colors are purple and pink, I mixed some purple, pink, and yellow sanding sugars together to create a sparkling topping for the cupcakes.
When you’re ready to decorate, pipe a big swirl of frosting onto each cupcake. Sprinkle some of the multi-color sanding sugar on top of the frosting and then add a fondant decoration.
Then, grab your favorite Powerline t-shirt, blast I2I, and enjoy!
