Powerline's Stand Out Cupcakes

Stand out and celebrate A Goofy Movie’s 25th Anniversary with these Powerline inspired cupcakes! These lemon cupcakes are topped with lemon buttercream, multicolored sprinkles, and fondant decorations!

Ingredients

Lemon Cupcakes

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • zest and juice of two lemons

Lemon Buttercream

  • 1 cup unsalted butter, softened
  • 4 ½ cups powdered sugar
  • 1 tablespoon milk
  • 3 tablespoons fresh lemon juice

Decorations

  • white fondant
  • black fondant
  • yellow gel food coloring
  • yellow cupcake liners
  • yellow, pink, and purple sanding sugar or sprinkles
  • black edible food marker

Equipment

Instructions

Lemon Cupcakes

  1. Preheat the oven to 350 F. Line a muffin pan with yellow cupcake liners.
  2. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs and vanilla and beat until combined.
  4. Gradually add the flour mixture to the butter mixture, beating on low speed. Add the milk, juice, and zest, and beat until combined.
  5. Divide the batter between the cupcake liners, filling about ⅔ full.
  6. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 2 minutes before transferring to a wire rack to cool completely.

Lemon Frosting

  1. In a large bowl, beat the butter until creamy.
  2. Add the sugar, juice, and milk and beat until combined. Add more sugar or milk if needed.
  3. Add a few drops of yellow food coloring and beat on high speed until fluffy.
  4. Transfer to a large piping bag fitted with a large star tip.

Decorations

  1. On a flat surface lightly dusted with powdered sugar, roll out a small amount of black fondant. Using a small cutter or a sharp knife, cut out music note shapes. Set on a piece of wax paper until ready to decorate.
  2. On a flat surface lightly dusted with powdered sugar, roll out a small amount of white fondant. Using a small round cutter, cut out small circles. Place on a piece of wax paper. Using the edible food marker, draw the Powerline logo on each circle.
  3. Take a small amount of white fondant and add a couple drops of yellow food coloring. Mix, using your hands, until the color is evenly distributed. Roll out the yellow fondant on a flat surface lightly dusted with powdered sugar. Using a small cutter or sharp knife, cut out lightning bolt shapes. Place on a piece of wax paper until ready to use.

Assembly

  1. Pipe a swirl of frosting onto the top of each cupcake.
  2. Sprinkle a mix of purple, pink, and yellow sanding sugar or sprinkles on top of the frosting.
  3. Add a fondant decoration to each cupcake, gently pressing it into the frosting.
