Happy (early) Winnie the Pooh Day! Tomorrow is the official celebration but I’m getting a head start with these beary good biscuits! Pooh is a beloved character in my family. He’s one of my mom’s favorite characters, and one of mine as well. Though I do have a soft spot for a certain gloomy donkey. While I do tend to think of myself as more of an Eeyore, I also recognize a part of myself in Pooh, especially he’s never-ending quest to find something sweet.

Since Pooh is so close to my heart, I knew I wanted to take a day to celebrate this silly old bear and make something he would approve of. These fluffy Pooh shaped biscuits are perfect for brunch or an afternoon snack and are delicious when eaten fresh from the oven and covered with just a smackerel of honey!

To make the biscuits, you’ll first want to make sure your butter is super cold. Keep it in the refrigerator or freezer while you’re prepping the other ingredients and don’t take it out until you need to work with it. Once the other ingredients are ready, take the butter out and grate it into small pieces using a box grater. If you don’t have one of these, you can use a smaller grater or cut in the butter using a pastry cutter or knife.

If you’re able to grate the butter, I recommend using your hands to combine the butter and flour. I found it easier to mix it all together with my fingers than with a spoon. Using your hands is also a good way to make sure you don’t overmix the dough.

Transfer the dough to a floured surface and use your hands to gently knead it. Then, fold the dough in half and gently press the two layers into each other. Turn the dough 90 degrees and repeat this process about 4 times, making sure not to overwork the dough. This process will create the layers in the biscuits.

When you’ve pressed down for the last time, use your hands to press it to about 1-inch thickness. Again, I used my hands as it helped me make sure the layers didn’t get pressed down too much.

Once the dough is about 1-inch thick, use the Pooh Bear stencil and a sharp knife to cut out the biscuits. Place the biscuits onto the prepared baking sheets and bake for about 12 minutes.

Let the biscuits cool for just a couple minutes — just enough so that you don’t burn yourself picking one up! Place desired amount of biscuits on a plate and cover with honey!

Enjoy!
