Ahoy! It’s been super hot here and since we’re right in the middle of summer, I’ve been thinking about cool treats. Slushies, milkshakes, and other frozen drinks are some of my favorite ways to beat the summer heat and for this treat, I was inspired by one of my favorite summer blockbusters, Pirates of the Caribbean: The Curse of the Black Pearl.

One of Captain Jack’s defining traits is his love of rum, which pairs perfectly with a frozen strawberry daiquiri. Of course, in the film Elizabeth burns a bunch of rum to rescue them from a deserted island and so these virgin daiquiris take their inspiration from Jack’s cries: “But why’s the rum gone?”.

For these daiquiris, I combined ice, strawberries, sugar, lemon juice, lime juice, and sprite. The citrus juices added a nice freshness and created a bright, refreshing drink. Of course, you can always add a bit of rum too 🙂

While these daiquiris are delicious on their own, I added a small bonus treat in the form of these lemon shortbread cookies, which were inspired by the cursed coins from the film. The cookies are imprinted with a skull pattern and sprayed with a touch of edible gold color. The brightness of the lemon cookies picks up the citrus in the daiquiris and makes a great pairing.

To make these cookies, I used food-safe silicone putty to create a custom mold of the pirate coins. I hadn’t done anything like this before, but after seeing it done on a Bon Appétit video, I thought it was so cool and wanted to try it.

I used EasyMold Silicone putty to make my cookie mold. It was very easy to combine and shape, but you do have to work quickly and use just enough for one mold at a time. To imprint the pattern into the putty, I used a model of the coin from a keychain. Once the molds were set, I pressed the dough into the molds and then froze them before baking.

Pirates of the Caribbean “But Why’s the Rum Gone?” Daiquiris

Inspired by Captain Jack’s loss of his favorite drink, these refreshing virgin strawberry daiquiris are the perfect way to stay cool this summer!

Ingredients

  • 6 cups ice
  • 6 ounces fresh strawberries, sliced
  • ½ cup granulated sugar
  • ¼ cup lime juice
  • ¼ cup lemon juice
  • 1 cup sprite

Instructions

  1. Combine ice, sugar, strawberries, juices, and sprite in a blender.
  2. Blend until smooth.

Pirate Coin Cookies

There’s no curse on these bight and lemony pirate coin cookies!

Servings 12 cookies

Ingredients

  • ½ cup butter, soft
  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 ¼ cup all-purpose flour
  • pinch salt
  • pirate coin silicone mold
  • edible gold colored spray

Instructions

  1. In a medium bowl, beat butter, powdered sugar, salt, and lemon juice until combined.
  2. Sift in the flour and beat until the dough forms small lumps and is more cohesive.
  3. Using your hands, form the dough into a large ball. It will still be somewhat crumbly but should stick together when pressed.
  4. Wrap in plastic wrap and place in the freezer for 15 minutes.
  5. Cut dough into tablespoon size pieces and roll into balls.
  6. Press dough balls into prepared molds and place into the freezer for 10 minutes. Repeat until all dough balls have been pressed.
  7. Preheat the oven to 375 Line a baking sheet with parchment paper.
  8. Pop the dough out of the molds and place onto a parchment lined baking sheet.
  9. Bake for 8-10 minutes or until the bottoms are golden brown.
  10. Let cool for 2 minutes on the baking sheet before transferring to a wire rack to cool completely.
  11. If desired, lightly spray cooled cookies with edible gold colored spray.
