Pirate Coin Cookies

There’s no curse on these bight and lemony pirate coin cookies!

Ingredients

  • ½ cup butter, soft
  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 ¼ cup all-purpose flour
  • pinch salt
  • pirate coin silicone mold
  • edible gold colored spray

Instructions

  1. In a medium bowl, beat butter, powdered sugar, salt, and lemon juice until combined.
  2. Sift in the flour and beat until the dough forms small lumps and is more cohesive.
  3. Using your hands, form the dough into a large ball. It will still be somewhat crumbly but should stick together when pressed.
  4. Wrap in plastic wrap and place in the freezer for 15 minutes.
  5. Cut dough into tablespoon size pieces and roll into balls.
  6. Press dough balls into prepared molds and place into the freezer for 10 minutes. Repeat until all dough balls have been pressed.
  7. Preheat the oven to 375 Line a baking sheet with parchment paper.
  8. Pop the dough out of the molds and place onto a parchment lined baking sheet.
  9. Bake for 8-10 minutes or until the bottoms are golden brown.
  10. Let cool for 2 minutes on the baking sheet before transferring to a wire rack to cool completely.
  11. If desired, lightly spray cooled cookies with edible gold colored spray.
