Happy Friday! Today is the start of Disneyland’s 70th Anniversary and I’m so excited to see all that Disneyland has planned. One of the things I’m most excited about is the return of the Paint the Night Parade. I love Disney’s nighttime parades and to celebrate this parade’s return, I made these Paint the Night Brownies! These Mickey shaped black chocolate brownies have a dark chocolate ganache and brightly colored chocolate candy lights, just like the parade floats!

I used black cocoa powder for these brownies to make them black like the night sky. If you’d rather use regular cocoa powder for the usual chocolate taste, you can also do that! To make the brownies, whisk together the flour, cocoa powder, and salt in a small bowl.

In a separate bowl, beat together the butter and brown sugar together until light. Add the eggs, honey, and vanilla extract and mix until well-combined. Gradually add the flour mixture to the sugar mixture, stirring on low speed until combined.

Transfer the batter through to a 9×9 inch square baking pan that has been greased and line with parchment paper. Bake the brownies for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let the brownies cool in the pan.

While the brownies are cooling, make the ganache by placing the chocolate chips in a medium heat-safe bowl. Heat the heavy cream in a saucepan, just until it is about to boil. 

Pour the cream over the chocolate. Let sit for 3 minutes and then stir together until smooth and fully combined. Add a few drops of black gel food coloring and stir to combine.

To assemble the brownies, use an offset spatula to spread the ganache over the cooled brownies. Let set for 20 minutes. Remove the brownies from the pan and place on a cutting board or other flat work-surface.

Use a Mickey Mouse cookie cutter to cut out Mickey shaped brownies. Sprinkle the colorful chocolate candy sprinkles over the top of the ganache.

Ingredients

Black Chocolate Brownies

  • 1 cup all-purpose flour
  • ½ cup black cocoa powder
  • ½ teaspoon salt
  • 1 ½ cups light brown sugar
  • 10 tablespoons unsalted butter, melted
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract

Dark Chocolate Ganache

  • 1 ½ cups semisweet chocolate chips
  • ½ cup heavy cream
  • colorful candy coated chocolate sprinkles
  • black gel food coloring
