Happy Friday! Being in the 90 degree weather has me wishing for a Disney Cruise and so this week I’m excited to share a recipe from Disney Cruise Line! Olaf’s Summertime Sip is a refreshing lemonade packed with frozen berries and a sprig of fresh mint! This fun and fruity drink is super easy to make and will transport you to the beaches of Castaway Cay!
Originally served at Castaway Cay, Disney’s private island in The Bahamas, Olaf’s Summertime Sip is lemonade with a twist. With the addition of frozen berries and mint, the lemonade picks up the flavors of the berries as they melt to create a fun and flavorful drink.
This recipe is very simple but you will need to freeze your berries in advance. You can use any kind of berries ( I think strawberries, blueberries, blackberries, raspberries would all be great) so pick whatever ones you like and think would taste good in lemonade. I decided to use Driscoll’s regular raspberries and Driscoll’s rose raspberries. I hadn’t had rose raspberries before but they have a great fruity flavor with hints of peach.
To freeze the berries, first wash and dry them. Place them on a baking sheet lined with wax paper or parchment paper and then place in the freezer. Freeze until the berries are frozen solid (freezing them overnight works great).
To assemble Olaf’s Summertime Sip, fill a tall glass with ice cubes. Then add a handful of the frozen berries. Pour your favorite lemonade over the top and stir to combine. Finally, garnish with a few springs of fresh mint. As the berries unfreeze, they’ll flavor the lemonade and create a fruity refreshing drink!

Ingredients
Olaf’s Summertime Sip
- lemonade
- frozen berries (ex: raspberries, strawberries)
- fresh mint
- ice cubes
Instructions

Place ice cubes and a handful of frozen berries into a tall glass.

Pour lemonade over the top of the ice and berries to fill the glass and stir to combine.

Garnish with a couple of fresh mint leaves.
