Happy Friday! It’s still hot here and so this week I’m excited to share Mickey’s Banana Pudding! I would happily eat banana pudding during any season. However, it’s a great summer dessert as it doesn’t involve any baking! I love how refreshing the chilled layers of vanilla pudding, whipped cream, bananas, and Nilla Wafers are on a hot day. To add a bit of magic, these individual banana pudding cups are topped with Nilla Wafer cookie ears and chocolate shavings!

While this dessert is very easy to make, it does need some time in the refrigerator. This recipe does make a lot (around 15 servings) so in addition to individual banana pudding cups, I also used some of it to make a medium sized bowl of banana pudding.

To start, whisk the sweetened condensed milk and water in a large bowl until fully combined. Slowly whisk in the pudding mix until the mixture is smooth and has no lumps. Cover the pudding with plastic wrap and refrigerate for at least 1 hour. 

Once the pudding has chilled, use electric beaters to beat the heavy cream until it reaches stiff peaks. Add the whipped cream to the pudding mixture and, using a rubber spatula, mix until fully incorporated. 

To make my banana pudding Mickey themed, I decided to make most of them to individual cups so that I could add cookie ears. To do this, place 1-2 spoonfuls of the whipped cream mixture into the bottom of a small bowl. Then, add a layer of Nilla Wafers. Next, add a layer of sliced banana. Finally, top with another 1-2 spoonfuls of the whipped cream mixture. If you’re using deep cups, you can add additional layers, just make sure to end with a layer of the whipped cream mixture.

If you want to make a large banana pudding bowl, just spread about ¼ of the whipped cream mixture onto the bottom of a large bowl. Then, add a layer of Nilla Wafers. Next, add a layer of sliced banana. Finally, top with a layer of the whipped cream mixture. Repeat the layers with the remaining ingredients. 

Cover the banana pudding with plastic wrap and refrigerate the banana pudding for 4-6 hours before serving. 

After the pudding has chilled, decorate with Nilla Wafers and chocolate shavings. For the individual pudding cups, place two Nilla Wafers, standing up, into the top layer of the whipped cream mixture. Then, use a micro zester to grate a small piece of chocolate and sprinkle the shavings on top of the banana pudding. I used a small square of Ghirardelli bittersweet chocolate.

  • 1 3.4oz package Jello Instant Vanilla Pudding
  • 1 14 oz can sweetened condensed milk
  • 1 ½ cups cold water
