Happy Friday! I usually love a rich chocolate brownie, but I’ve been thinking about blondies for the past week and so I’m excited to share Minnie’s Butterscotch Blondies! While blondies are similar in structure to a brownie, their flavor is more brown sugar and vanilla. I thought that would pair perfectly with butterscotch so these Minnie Mouse shaped brown sugar blondies are packed with butterscotch chips and topped with a white chocolate bow!

I actually can’t remember the last time I had a blondie so I’m not sure why I had a strong desire to make them this week. Maybe it’s seeing pictures of those peanut butter blondies from The Grand Californian Hotel on Instagram — a recipe for another day!

Anyway, these blondies are super easy to make and if you’d rather have Mickey instead of Minnie, you can just skip the chocolate bow decoration!

To start, preheat your oven to 350 F and grease a square pan. I used a 9×9 inch pan, but you can also use an 8×8 inch pan. Next, combine the flour, baking powder, and salt in medium bowl. In a separate, large bowl, beat the sugar, egg, and vanilla until light and fluffy. Add the butter and beat until combined.

Add the flour mixture and beat on low speed until combined. Stir in the butterscotch chips and transfer the batter to the prepared pan. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool completely in the pan before cutting.

While the blondies are cooling, make the bow decorations by placing about 1/4 cup of red candy melts into a disposable piping bag and heating the bag in the microwave. Make sure to check the candy and massage the candy melts in the bag every 30 seconds. For these, I used Wilton’s Red Candy Melts.

Place a piece of wax paper on a flat surface, like the countertop. Pipe the candy melt on to the wax paper in a bow pattern. Repeat until you have enough for each blondie. Let the chocolate rest until it is set.

To assemble the blondies, first transfer them from the pan to a flat surface, like a cutting board. Use a small to medium Mickey Mouse cookie cutter to cut them. Then, add a chocolate bow to the top of each blondie.

Ingredients

Blondies

  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup light brown sugar, packed
  • 1 large egg
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Decoration

  • ¼ cup red candy melts

Equipment

  • 8×8 or 9×9 inch square pan
  • small Mickey Mouse cookie cutter
  • disposable piping bag

  5. Stir in the butterscotch chips.
  6. Transfer the dough to the prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool completely in the pan before cutting.
  8. Once cooled, cut the blondies into Mickey shapes using a cookie cutter.

Bow Decoration

  1. Place the red candy melts in a disposable piping bag. Melt in the microwave, checking every 30 seconds.
  2. Place a piece of wax paper onto a flat surface. Pipe the candy melts into bow shapes. Let rest until the candy melt is completely set.
  3. Place a bow onto the top of each blondie.
