Minnie’s Butterscotch Blondies

These Minnie Mouse shaped brown sugar blondies are packed with butterscotch chips and topped with a white chocolate bow!

Ingredients

Blondies

  • 1 cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup light brown sugar, packed
  • 1 large egg
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Decoration

  • ¼ cup red candy melts

Equipment

  • 8x8 or 9x9 inch square pan
  • small Mickey Mouse cookie cutter
  • disposable piping bag

Instructions

Blondies

  1. Preheat the oven to 350 F. Grease the pan with cooking spray.
  2. In a medium bowl, combine the flour, baking soda, and salt.
  3. In a large bowl, beat the egg, brown sugar, and vanilla until light and fluffy. Add the butter and beat until combined.
  4. Add the flour mixture and beat on low speed until combined.
  5. Stir in the butterscotch chips.
  6. Transfer the dough to the prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool completely in the pan before cutting.
  8. Once cooled, cut the blondies into Mickey shapes using a cookie cutter.

Bow Decoration

  1. Place the red candy melts in a disposable piping bag. Melt in the microwave, checking every 30 seconds.
  2. Place a piece of wax paper onto a flat surface. Pipe the candy melts into bow shapes. Let rest until the candy melt is completely set.
  3. Place a bow onto the top of each blondie.
