Happy Monday! It’s almost the Fourth of July and I’m getting ready with Mickey’s Red, White, and Blue Cupcakes! These red velvet cupcakes are topped with a white cream cheese frosting, red, white, and blue star gummies and mini Oreo Mickey ears! They’re a fun and delicious treat Fourth of July treat!

Red velvet cake is not always my favorite (I generally prefer a regular chocolate cake) but I do love the color and how nicely the cake and cream cheese frosting go together. For this recipe, I adapted the red velvet cake Sorcerer Mickey Cake I previously made into cupcakes.

Mickey's Red, White, and Blue Cupcakes

To make these cupcakes, first line your muffin pan with red (or blue) cupcake liners. I used some red foil cupcake liners as I liked how shiny they are. Next, make the batter by whisking together the flour, cocoa powder, baking soda, and salt. In a separate bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla to the butter mixture, beating until combined.

Meanwhile, stir the vinegar and red food coloring into the buttermilk. I used red gel food coloring from Ann Clark. Add the flour mixture to the butter mixture, mixing on low speed. Then, add in the buttermilk, beating until smooth. 

Pour the batter into prepared muffin, filling each cup halfway, and bake at 350 F for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely before frosting.

While the cupcakes are cooling, make the frosting by beating the butter until creamy. Add the cream cheese, vanilla, and salt and beat until combined. Gradually add in the powdered sugar and beat until smooth. Transfer the frosting to a piping bag fitted with a large star tip. I used a Wilton 1M tip.

To decorate the cupcakes, pipe a swirl of frosting onto the tops of each cupcake. Place one red, one blue, and one white star shaped candy (or sprinkle) onto the front of each cupcake. For these, I used these star shaped gummy candies from Target. Finally, add two mini Oreos to the sides of the cupcakes to make Mickey ears.

Ingredients

Red Velvet Cake

  • 1 ¼ cup all-purpose flour
  • 1 ½ tablespoons unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter, room temperature
  • ½ cup buttermilk, room temperature
  • ½ tablespoon white vinegar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • red gel food coloring

Cream Cheese Frosting

  • 12 tablespoons unsalted butter, room temperature
  • 2 cups powdered sugar
  • 8 ounces cream cheese, room temperature
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Decorations

  • star shaped gummies or sprinkles
  • mini Oreos

Equipment

  • 12- cup muffin pan
  • red cupcake liners
  • piping bag
  • large star piping tip (Wilton 1M)

Instructions

Red Velvet Cupcakes

  1. Preheat the oven to 350 F. Line muffin pan with red cupcake liners.
  2. In a medium bowl, whisk the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla and beat until combined.
  5. Stir the vinegar and red food coloring into the buttermilk.
  6. Add the flour mixture to the butter mixture, mixing on low speed. Add in the buttermilk and beat until smooth.
  7. Pour the batter into prepared muffin, filling each cup halfway.
  8. Bake the cupcakes for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.

Cream Cheese Frosting

  1. In a medium bowl, beat the butter until creamy. Add the cream cheese, vanilla, and salt and beat until combined.
  2. Gradually add in the powdered sugar and beat until smooth.
  3. Transfer the frosting to a piping bag fitted with a large star tip.

Assembly

  1. Pipe a swirl of frosting onto the top of each cupcake.
  2. Press one red, one blue, and one white star candy or sprinkle into the frosting swirl.
  3. Press two mini Oreos into the sides of the frosting swirl to make Mickey ears.
