Happy Mardi Gras! Growing up my family always had pancakes for dinner on Mardi Gras and so I’m excited to share Mickey’s Mardi Gras Pancakes! Shaped like my favorite mouse, these thick and fluffy pancakes are perfect for any meal!

In addition to King Cake, pancakes are the food I most associate with Mardi Gras since I always had them growing up. While I technically made these pancakes for Mardi Gras, they’re great for any meal. These pancakes are pretty straightforward to make, but they do require some special equipment –pancake molds! I used pancake molds that were part of the Disney Eats collection that launched a few years ago, but Williams-Sonoma makes a similar set. I hadn’t used pancake molds before, so I didn’t know all of the tips and tricks, but the most important tip is to make sure they’re well coated in cooking spray and preheated.

To make these pancakes, first whisk together the flour, sugar, baking powder, and salt. Set aside. Then, beat the eggs in a large bowl until light and frothy. Add the milk, butter, and flour mixture to the eggs and beat until smooth.

Next, heat a griddle or large frying pan over medium heat. I used a Lodge cast iron griddle for this so I had some extra room for the pancakes. Add a tablespoon or two of vegetable oil to grease the pan. Spray the pancake molds with cooking spray and then place them onto to griddle to preheat.

Transfer the pancake batter to a squeeze bottle. You can also use a spoon to scoop the batter into the molds, but I found it easier to fill them using the squeeze bottle. Squeeze the batter into the molds, filling them about 2/3 of the way up. If you’d like to add berries or chocolate chips, sprinkle them into the mold now.

Let the pancakes cook until the batter is bubbly and starts to pull away from the sides of the mold. Remove the molds, flip the pancakes, and cook for another 1-2 minutes. Wipe the molds, re-grease them with cooking spray, and repeat with remaining batter.

Instructions

  4. Grease a griddle or large frying pan with vegetable oil. Spray the pancake molds with cooking spray and place onto the griddle to pre-heat.
  5. Transfer the pancake batter to a squeeze bottle. You could also scoop the batter into the molds using a spoon, the squeeze bottle is just a bit easier.
  6. Squeeze the batter into the pancake molds, filling it about ⅔ of the way up the mold. Let cook until the batter is bubbly and starts to pull away from the molds.
  7. Remove the molds, flip the pancakes, and cook for another 1-2 minutes.
  8. Wash the pancake molds, re-spray them with cooking spray, and repeat until all of the pancake batter is used.
