Happy Friday! With snowstorms happening across the country, I’m finally seeing a bit of snow in my neighborhood! And so, to celebrate our first real snow this year, I made Mickey’s Lemon Snowcakes! These lemon snowflake shaped cakelets are topped with a fresh lemon glaze and a small Mickey sprinkle! Perfect anytime of day with a hot cup of tea!

I love a good lemon cake and these are the perfect blend of tart and sweet. Paired with the tart lemon icing, they have a great lemon flavor and are delicious as a lighter dessert, afternoon treat or even an indulgent breakfast pastry!

To make the lemon cakes, whisk together the flour, salt, baking powder, and baking soda in a small bowl. In a liquid measuring cup, whisk together the buttermilk, vanilla, lemon zest and juice. In a medium bowl, beat the butter and sugar until light and fluffy. Add the eggs and beat until incorporated. Add the flour mixture in three additions, alternating with the buttermilk mixture. Beat until smooth.

Transfer the batter to the cakelet pan. For this recipe, I used Nordic Ware’s Frozen 2 themed snowflake cakelet pan. The exact pan doesn’t seem to be available anymore, but there are plenty of similar ones available. Once filled, tap the pan on the counter to release any air bubbles. Bake at 350 F for 20 minutes or until light golden brown. Cool the cakes for 10 minutes in the pan before transferring to a wire rack to cool completely.

To make the glaze, whisk together the powdered sugar and lemon juice in a small bowl. Place the cakes on a wire rack over a piece of wax paper. Spoon the glaze over each cake, letting it run down the sides. Place a small Mickey Mouse sprinkle in the center of each cake. Let the glaze set completely, about 25 minutes.

Ingredients

Lemon Cakelets

  • 6 tablespoons unsalted butter, softened
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 4 tablespoons buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 4 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • cup granulated sugar
  • 2 large eggs, room temperature

Lemon Glaze

  • cup powdered sugar, sifted
  • 6 teaspoons lemon juice

Decoration

  • white Mickey Mouse sprinkles

Instructions

Lemon Cakelets

  1. Preheat the oven to 350 F. Spray the cakelet pan with cooking spray. Set aside.
  2. In a small bowl, whisk together the flour, salt, baking powder, and baking soda. Set aside.
  3. In a liquid measuring cup, whisk together the buttermilk, vanilla extract, lemon zest, and lemon juice. Set aside.
  4. In a medium bowl, beat the butter and sugar until light and fluffy. Add the eggs and beat until incorporated.
  5. Reduce the beaters to low speed and add the flour mixture in three additions, alternating with the buttermilk mixture. Start and end with flour. Increase beaters to medium and beat until smooth.
  6. Transfer the batter to the cakelet pans, dividing it evenly between each snowflake.
  7. Bake until light golden brown or until a toothpick inserted in the center comes out clean, about 20 minutes.
  8. Cool cakelets in the pan for 10 minutes before transferring to a wire rack to cool completely.

Lemon Glaze

  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Spoon glaze over the tops of the cakes, letting the icing spread down the sides.
  3. Add a Mickey Mouse sprinkle to the center of each snowflake cake.
  4. Let the glaze set completely, about 25 minutes.
