Ingredients

Lemon Cakelets

  • 6 tablespoons unsalted butter, softened
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 4 tablespoons buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 4 teaspoons lemon zest
  • 2 teaspoons lemon juice
  • cup granulated sugar
  • 2 large eggs, room temperature

Lemon Glaze

  • cup powdered sugar, sifted
  • 6 teaspoons lemon juice

Decoration

  • white Mickey Mouse sprinkles

Equipment

  • snowflake shaped cakelet pan

Instructions

Lemon Cakelets

  1. Preheat the oven to 350 F. Spray the cakelet pan with cooking spray. Set aside.
  2. In a small bowl, whisk together the flour, salt, baking powder, and baking soda. Set aside.
  3. In a liquid measuring cup, whisk together the buttermilk, vanilla extract, lemon zest, and lemon juice. Set aside.
  4. In a medium bowl, beat the butter and sugar until light and fluffy. Add the eggs and beat until incorporated.
  5. Reduce the beaters to low speed and add the flour mixture in three additions, alternating with the buttermilk mixture. Start and end with flour. Increase beaters to medium and beat until smooth.
  6. Transfer the batter to the cakelet pans, dividing it evenly between each snowflake.
  7. Bake until light golden brown or until a toothpick inserted in the center comes out clean, about 20 minutes.
  8. Cool cakelets in the pan for 10 minutes before transferring to a wire rack to cool completely.

Lemon Glaze

  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  2. Spoon glaze over the tops of the cakes, letting the icing spread down the sides.
  3. Add a Mickey Mouse sprinkle to the center of each snowflake cake.
  4. Let the glaze set completely, about 25 minutes.
