In a small bowl, whisk together the flour, salt, baking powder, and baking soda. Set aside.

In a liquid measuring cup, whisk together the buttermilk, vanilla extract, lemon zest, and lemon juice. Set aside.

In a medium bowl, beat the butter and sugar until light and fluffy. Add the eggs and beat until incorporated.

Reduce the beaters to low speed and add the flour mixture in three additions, alternating with the buttermilk mixture. Start and end with flour. Increase beaters to medium and beat until smooth.

Transfer the batter to the cakelet pans, dividing it evenly between each snowflake.

Bake until light golden brown or until a toothpick inserted in the center comes out clean, about 20 minutes.

Cool cakelets in the pan for 10 minutes before transferring to a wire rack to cool completely.
