Happy Friday! Getting to have a little bit of cookie dough is one of my favorite parts of making cookies. And while I had planned to make cookies this week, my oven had other ideas. So, instead of fully baked cookies, I’m excited to share Mickey’s Chocolate Chip Cookie Dough Bites! These cookie dough bites have heat treated flour and no eggs, so they’re safe to eat raw! Of course, I also added some chocolate chips and chocolate Mickey ears!

Edible cookie dough got super popular a few years ago and while it doesn’t taste quite the same as regular cookie dough, it is a fun idea and safer to eat.

To make sure your cookie dough is safe to eat raw, you’ll first need to heat treat the flour. There are a couple ways to do this. The first option is to put the flour in the microwave and heat on high until it reaches 165 F. The second option is to spread the flour out on a baking sheet at bake at 300 F, checking every 2 minutes, until it reaches 165 F. To check the temperature, it’s easiest to have a thermometer. Let the flour cool while you prepare the rest of the dough.

Everything else comes together pretty fast. First, beat the butter and sugar together until light and fluffy. Add the salt, vanilla, and heavy cream and beat until combined. Then, add the heat treated flour, mixing until combined. Finally, stir in the chocolate chips.

The cookie dough is now ready! Since I wanted more of a dome shape for my cookie dough bites, I placed the dough in the refrigerator for 10 minutes or so, just until it was firm.

To serve the cookie dough, I used a cookie scoop to scoop the dough onto a plate. I then added some dark chocolate candy wafers to add Mickey ears. The cookie dough can be kept in the refrigerator for a week or in the freezer for up to a month.

Ingredients

Edible Chocolate Chip Cookie Dough

  • 8 tablespoons unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup all-purpose flour, heat treated and cooled
  • ½ cup semisweet chocolate chips

Decoration

  • dark chocolate candy wafers

Instructions

Heat Treated Flour

  1. Option 1: Microwave flour on high until it reaches 165 F.

Edible Chocolate Chip Cookie Dough

  1. In a medium bowl, beat the butter and sugar until light and fluffy.
  2. Add the vanilla, heavy cream, and salt. Beat until combined.
  3. Add the heat treated flour, mixing until incorporated.
  4. Stir in the chocolate chips.
  5. If desired, place cookie dough in the refrigerator to chill until firm.
  6. The cookie dough can be kept in an airtight container in the refrigerator for a week or in the freezer for up to 6 months.

Assembly

  1. Use a cookie scoop to scoop out portions of cookie dough.
  2. Press two chocolate candy wafers into the top of each cookie dough mound to make Mickey ears.
