Happy Friday! My favorite ice cream shop recently re-opened so this week I’m making one of my favorite summer desserts. Of course, everything is better Mickey shaped, so Mickey’s Brownie Ice Cream Sundae features a homemade Mickey shaped chocolate chunk brownie with a couple scoops of my favorite ice cream!
I typically associate brownie sundaes with summer and that’s when I remember eating them the most growing up. Of course, they’re great year round, but for me, they’re extra special in the summer! I love extra chocolatey brownies so these brownies have chocolate chunks and pair perfectly with ice cream.

To make these brownies, start by melting the chocolate pieces and butter in a double boiler. To make a double boiler, fill a small or medium saucepan with a couple inches of water. Once the water is hot, place a heat-safe bowl on top of the pan so that it’s resting on the pan, but not touching the water.
Place the chocolate pieces and butter in the bowl, you’ll use the steam coming off the water to melt them. Stir the mixture occasionally, until everything is melted. Once melted, remove from the heat and set aside to cool slightly.
In a small bowl, combine the flour and baking powder. Set aside. In a medium bowl, whisk together the eggs, granulated sugar, salt, and vanilla extract. Whisk vigorously until the mixture lightens in color and thickens, about 1 minute.
Add the melted chocolate mixture to the egg mixture, whisking to combine. Then, fold in the flour mixture using a rubber spatula. Finally, stir in the chocolate chunks or chips.
Spread the batter into a 8×8 inch square pan that’s been greased with cooking spray. For these brownies, I used a porcelain baking dish from Made In, but you can use any 8×8 inch pan. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Place the brownie pan on a wire cooling rack. Let cool completely in the pan.
Once cool, use a Mickey shaped cookie cutter to cut out Mickey Mouse shaped brownies. I used a biscuit cutter from ShopDisney, but any medium sized Mickey cookie cutter will work! I was able to make four Mickey shaped brownies.
When you’re ready to serve the sundaes, place one to two scoops of ice cream in a bowl. I used my favorite ice cream favor, It Came from Gowanus, from Ample Hills, a local ice cream shop, for an extra chocolatey dessert. But definitely use your favorite flavor! These brownies pair great with a variety of flavors like vanilla, strawberry, or mint chocolate chip as well. I also especially love the white chocolate raspberry flavor from Haagen Dazs!
Add a brownie to the bowl and any other desired sundae toppings. Enjoy Mickey’s Brownie Ice Cream Sundae!
Mickey’s Brownie Ice Cream Sundae
Ingredients
Chocolate Chunk Brownies
- 4 ounces unsweetened chocolate, broken into pieces
- 8 tablespoons unsalted butter
- 2 large eggs, room temperature
- 1 cup + 6 tablespoons granulated sugar
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ½ teaspoon baking powder
- ¾ cup semisweet chocolate chunks or chips
Ice Cream Sundae
- 1 pint favorite ice cream
- whipped cream, optional
- hot fudge, optional

- 1 8×8 inch square pan

Instructions
Chocolate Chunk Brownies

Preheat the oven to 350 F. Spray an 8×8 inch square pan with cooking spray. Set aside.
