My favorite thing to eat at Disney World is the gingerbread cookies sold in the Main Street Confectionery, as well as some other bakeries around the parks. Gingerbread is already one of my favorite holiday treats, but there is something so delicious about those Disney gingerbread cookies. They’re thick and soft, and the flavor is the perfect mix of sweet with just a little kick of spice. I also love that the ears are dipped in delicious chocolate. The best part, however, is that they are available year round, so whenever you visit, you can always have a little taste of the holidays. 

Since making and eating gingerbread is one of my favorite holiday traditions, I’m excited to share these delicious Mickey Mouse Gingerbread Cookies. While not in the same shape, these cookies are just as soft, well-spiced, and chocolate dipped as the ones in Disney World.

Overall, gingerbread cookies are pretty easy to make and can be a great activity to do with your family and friends. My mom and I love making cookies together and usually try out different cutters and decorations each year. Since no two cookies are required to look the same, you can definitely show off your creativity. 

For my cookies, I mostly made them in the shape of Mickey Mouse, using a small shaped cutter, but I also included some trees, snowflakes, and a couple gingerbread men to add to the holiday theme.

To decorate my cookies, I used royal icing in white, green, and red. To make my icing, I used meringue powder instead of egg whites, but if you can’t find the powder, egg whites work just as well. If you need a recipe for royal icing using egg whites, you can find one on my Ear Hat Cookies post. I put the icing in piping bags and used three different small round tips to get different sized lines. Make sure to let the icing dry completely before stacking or storing.

To make the chocolate covered ears, I melted milk chocolate chips in a double boiler and then dipped the ears into the chocolate. Since the chocolate can be thick and heavy on the cookie, you’ll want to use a rubber spatula to scrape of the excess chocolate. Once dipped, let them dry on a baking sheet lined with wax or parchment paper.

Mickey Mouse Gingerbread Cookies

Add some Disney magic to your holidays with these adorable chocolate dipped gingerbread cookies inspired by the ones from the Main Street Confectionery!

Ingredients

Cookies

  • 3 cups flour
  • ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 egg
  • cup unsulphured molasses

Royal Icing

  • 4 cups powdered sugar
  • 3 tablespoons meringue powder
  • ½ to ¾ cup warm water

Decorations

  • 4 oz milk chocolate chips or bar chopped into pieces
  • red and green gel food coloring

Equipment

  • small Mickey Mouse cookie cutter
  • holiday cookie cutters, as desired
  • piping bags
  • small round piping tips

Instructions

Cookies

  1. In a medium bowl, sift together flour, salt, baking soda, and spices. Set aside.
  2. In a large bowl, beat butter and sugar until light and fluffy.
  3. Add in egg and molasses and beat until well combined.
  4. Gradually add the flour mixture to the butter mixture, beating until incorporated.
  5. Divide the dough in half, wrap each half in plastic wrap and place in the refrigerator for at least two hours.
  6. When the dough is ready, preheat the oven to 350 F and line baking sheets with parchment paper.
  7. On a lightly floured surface,, roll out the dough to about ¼ inch thickness. If you like a thicker cookie, aim for about ½ inch thickness, but know they’ll take a little longer to bake.
  8. Dip cookie cutters in a little bit of flour and then cut out the cookies from the dough.
  9. Place cut out cookies on prepared baking sheets and bake for 8-12 minutes, until cookies are firm and the edges are just beginning to brown.
  10. Cool for 1-2 minutes on the baking sheet before transferring to a wire rack to cool completely.

Royal Icing

  1. In a large bowl, beat sugar and meringue powder together until combined.
  2. Add water and beat in medium to high speed until very glossy and hold stiff peaks.
  3. If needed, add more water or sugar to get the right consistency.
  4. Divide icing into bowls and add desired colors.
  5. Transfer icing to piping bags with round tips to decorate.

Chocolate

  1. Melt chocolate in a double boiler.
  2. Dip Mickey Mouse ears into melted chocolate. Use a rubber spatula to scrape off excess chocolate.
  3. Place dipped cookies on a baking sheet lined with wax or parchment paper to let chocolate set.
