Happy Saturday! Disney’s Pocahontas celebrated its 30th anniversary this week and while I can’t believe it’s that old, I couldn’t miss celebrating my absolute favorite Disney character, Meeko! I love Meeko’s spunk, mischievous nature, determination, and our shared love of snacks. Inspired by his striped tail, Meeko’s Raccoousse has layers of grey cookies and cream mousse and crushed Oreos!

For this treat, I actually adapted a previous recipe — the grey stuff from Disney World and Disneyland! It’s one of my favorite mousses in the parks and I loved the grey color for my raccoon tail inspired mousse cups. Since the grey stuff already has an Oreo flavor to it, I knew that crushed up Oreos would be the perfect the addition as the black layer.



To make the grey stuff mousse, whisk together the vanilla pudding mix, the chocolate pudding mix, vanilla extract, and milk in large bowl. Chill the mixture in the refridgerator for 5-10 minutes.
Meanwhile place the Oreo cookies in a food processor and pulse them until they’re fine crumbs. Set those aside and make the whipped cream by using a hand mixer to beat the heavy cream until it reaches stiff peaks.
Next, remove the pudding mixture from the refrigerator and stir in the Oreo crumbs. Once combined, use a rubber spatula to gently fold in the whipped cream. Cover the mousse with plastic wrap and chill it inn the refrigerator for one hour.



While the mousse is chilling, place 10 Oreos in a large Ziploc bag. Use a rolling pin to crush them into small to medium size pieces. Set aside until ready to assemble.
To assemble Meeko’s Raccoousse, place a layer of grey mousse in the bottom of a glass or clear bowl. Top with a layer of crushed Oreos. Add a second layer of grey mousse and a final layer of crushed Oreos.



Finally, top the mousse cups with a picture of Meeko. I made my own toppers by printing out a picture and laminating it, but you could also use some pre-made Meeko cupcake toppers.

Meeko’s Raccoousse
Inspired by his striped tail, Meeko's Raccoousse has layers of grey cookies and cream mousse and crushed Oreos!
Ingredients
Grey Cookies & Cream Mousse
- 1 3.4oz package instant vanilla pudding mix
- 3 tablespoons instant chocolate pudding mix
- ½ cup milk
- 1 teaspoon vanilla extract
- 15 Oreo cookies
- 2 cups heavy whipping cream
Oreo Cookie Layer
- 10 Oreo cookies
Instructions
Grey Stuff

In a large bowl, whisk together the vanilla pudding mix, the chocolate pudding mix, the vanilla extract, and the milk. Chill the mixture in the refridgerator for 5-10 minutes.

Place the 15 Oreos into a food processor. Pulse until the Oreos become fine crumbs. Set aside.

Using a hand mixer, whip the heavy cream until it reaches stiff peaks.

Remove the pudding mixture from the refrigerator and mix in the Oreo crumbs.

Use a rubber spatula to gently fold the whipped cream into the pudding mixture.

Cover the mousse mixture with plastic wrap and place in the refrigerator for 1 hour.
Assembly

While the mousse is chilling, place the 10 Oreos in a large ziploc bag. Use a rolling pin to break the Oreos into small to medium size pieces.

Place a layer of grey mousse into a small glass or clear bowl.

Top the mousse layer with a layer of Oreo pieces.

Add a second layer of mousse and a final layer of Oreo pieces. Place a Meeko cupcake topper on top.
