Happy 70th Birthday Kermit! My favorite frog is turning 70 and I couldn’t resist a special order from Miss Piggy to celebrate! As Miss Piggy explained, “What would Kermit like more than moi?” and so Kermit’s Birthday Cupcakes are a fun ode to Miss Piggy! These vanilla cupcakes are topped with pink buttercream and white candies to make her signature necklace! Of course, I included a little extra treat for Kermit too : )

I used a vanilla cupcake for these cupcakes and I wanted a lighter color, but they would also work with a chocolate cupcake or any other flavor! I used Mentos for Miss Piggy’s necklace and also Kermit’s eyes. Just draw on the eyes with a food safe marker!

To make the cupcakes, start by combining the flour, baking powder, and salt in a small bowl. In a medium bowl, beat butter and sugar together until light and fluffy, about 2-3 minutes. Add in the egg, egg white, and vanilla and beat until blended.
On low speed, gradually beat in flour mixture, one third at a time, alternating with the milk, beginning and ending with flour.
Divide batter among a muffin pan lined with cupcake linters and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. For these, I used pink polka dot liners for Miss Piggy and green polka dot liners for Kermit! Cool the cupcakes for 10 minutes in the pan and then transfer to a wire rack to cool completely.



While the cupcakes are cooling, make the frosting by placing the butter and vanilla in a medium bowl and beating them together until smooth and creamy. Add the powdered sugar and milk and beat until combined. Then, beat the frosting on high speed until fluffy.
Divide the frosting in half. Add a few drops of pink gel food coloring to one half and a few drops of green and yellow food coloring to the other half. For my frosting, I used gel food coloring from Ann Clark in bubblegum pink, leaf green, and lemon yellow.
Transfer the pink frosting to a large piping bag fitted with a large star tip. To decorate the Miss Piggy cupcakes, pipe a swirl of frosting onto each cupcake. Then, place three Mentos candies along the bottom edge to make her necklace.
For the Kermit cupcakes, use an offset spatula to frost the top of each cupcake. Use a black food safe marker to draw eyes on the mentos candies and place two on top of the cupcake to make his eyes.

Kermit’s Birthday Cupcakes
Ingredients
Vanilla Cupcakes
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter. room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 egg white
- 1 ½ teaspoons vanilla extract
- ½ cup milk
Vanilla Buttercream
- 1 cup unsalted butter, room temperature
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 4 tablespoons milk
- pink gel food coloring
- green gel food coloring
- yellow gel food coloring
Decoration
- Mentos candies
- Black food safe marker
Equipment
- 12 cup muffin pan
- 6 pink cupcake liners
- 6 green cupcake liners
- 1 piping bag
- 1 large star piping tip (Wilton 1M)
Instructions
Vanilla Cupcakes

Preheat the oven to 350 F. Line muffin pan with cupcake liners (half green, half pink).

Vanilla Buttercream

Assembly

Pipe a swirl of pink buttercream on the tops of half of the cupcakes. Place three plain mentos along the bottom edge to make Miss Piggy’s necklace.

Use an black food safe marker to draw pupils on the 12 of the mentos candies.

Use an offset spatula to frost the tops of the remaining cupcakes with green frosting.

Place two eye mentos sticking up on top of the cupcake to make Kermit’s eyes.
