Happy Friday! Today, Disneyland is re-opening! While I’m not in California, and therefore unable to visit, it’s still exciting to see magic returning to such a special place. To celebrate this special day, I’m excited to share some favorite Disneyland treats! Found in New Orleans Square, these mint juleps are a refreshing blend of lemonade, club soda, and mint. They’re perfect with a warm Mickey beignet!
The main ingredients in these mint juleps are mint syrup, lemonade, and club soda. Typically mint juleps include bourbon, but since these are made like the ones in Disneyland, they’re alcohol free. For these mint juleps, I made my own mint syrup, but you could also use a pre-made syrup, like the one made by Monin.
Making your own mint syrup is pretty easy though! This recipe will leave you with a bit extra, which you can use to make more drinks or you can add it to other baked goods. To make the syrup, combine the water, sugar, and fresh mint leaves in a small saucepan. Bring to a boil over medium heat, stirring until the sugar has dissolved. Let cook for one minute and then remove the mixture from the heat. Pour the mixture through a fine mesh sieve and into a heat-safe bowl. Cover and let cool in the refrigerator until it reaches room temperature. Store any extra mint syrup in an airtight container in the refrigerator for up to a month.
To make the mint juleps, fill a highball glass with ice. Pour 1/2 cup of the lemonade and 1/2 cup of the club soda into the glass. Add two tablespoons of mint syrup and stir until combined. For the garnish, skewer two maraschino cherries and a fresh mint on a decorative skewer or toothpick. Place one sweker into each mint julep.

Ingredients
Mint Syrup
- 1 cup water
- 1 cup granulated sugar
- 1 cup fresh mint leaves
Mint Juleps
- 1 cup lemonade
- 1 cup club soda
- 4 tablespoons mint syrup
- 4 maraschino cherries
- 2 fresh mint leaves
Equipment
- 2 highball glasses
- ice cubes
- decorative skewers or toothpicks
Instructions
Mint Syrup

Combine the water, sugar, and mint leaves in a small saucepan over medium heat. Bring to a boil, stirring until the sugar dissolves. Cook for 1 minute.

Remove the mixture from the heat and let sit for 30 minutes.

Pour the mixture through a fine mesh sieve and into a heat-safe bowl.

Cover with plastic wrap and let cool in the refrigerator until it reaches room temperature.

Transfer unused mint syrup to an airtight container and store in the refrigerator for up to a month.
Mint Juleps

For each Mint Julep, fill a highball glass with ice. Pour ½ cup of the lemonade and ½ cup of the club soda into the glass. Add 2 tablespoons of the mint syrup and stir to combine.

Skewer two cherries and one mint leaf with a decorative skewer or toothpick. Add one skewer to each drink as a garnish.
