Happy Friday! After an amazing trip to Disneyland and D23, I’m missing being in California. One of the best things I ate during my trip was a chocolate covered pineapple from Trolley Treats in Disney California Adventure. I loved the combination of rich dark chocolate and sweet juicy pineapple and since I’m missing Disneyland this week, I’m excited to enjoy a taste of it at home with this recipe for Disneyland Chocolate Covered Pineapple!

Disneyland Dark Chocolate Covered Pineapple

Honestly, the hardest part of this recipe is cutting up a fresh pineapple. It’s something I’ve only done a couple of times and so I’m definitely not an expert but there are plenty of videos out there showing various ways to do it. The main thing is that you want to end up with long pineapple spears (not rounds).

I accomplished this by first cutting the top and the bottom off of the pineapple. Then, I set the pineapple upright and cut straight down to cut the entire pineapple in half. Once in halves, I made two diagonal cuts lengthwise to cut out the core. Finally, I cut down the sides to remove the pineapple skin from the outside. I was able to get four large pineapple spears to use.

Once I had the spears cut out, I inserted a lollipop stick vertically into each of the spears. This makes it easier to dip the pineapple in the chocolate. You could also use a popsicle stick. Finally, melt the chocolate in a tall microwave safe container. I used a tall glass measuring cup and heated it in the microwave, stirring every 30 seconds until melted.

For the chocolate, I used Ghirardelli Dark Chocolate Melting Wafers. I love the dark chocolate taste and how easy the chocolate sets. To make a nice thick coat of chocolate, I dipped all of the pineapple spears, let the chocolate set, and then dipped them again. For the decoration, I melted some Ghirardelli White Chocolate Melting Wafers and used a piping bag to drizzle the white chocolate over the set dark chocolate coating. Store the chocolate covered pineapple in the refrigerator.

Ingredients

Dark Chocolate Covered Pineapple

  • 1 fresh pineapple, cut into spears
  • 3 10 oz bags Ghirardelli Dark Chocolate Melting Wafers
  • 1 oz Ghirardelli White Chocolate Melting Wafers

Equipment

  • 4 lollipop sticks or popsicle sticks
  • piping bag
  • tall microwave safe container
  • wax paper

Instructions

Dark Chocolate Covered Pineapple

  1. Place the pineapple spears on a wax paper lined baking sheet.
  2. Insert one lollipop or popsicle stick vertically into each pineapple spear. Place baking sheet into the refrigerator while you melt the chocolate.
  3. Place 1 ½ bags of dark chocolate melting wafers into a tall microwave safe container. Heat in the microwave, stirring every 30 seconds until melted.
  4. Remove the pineapple spears from the refrigerator and dip each one into the chocolate, fully covering all sides.
  5. Place dipped pineapple spears back onto the wax paper lined baking sheet and return to the refrigerator to set, about 15 minutes.
  6. Meanwhile, place the remaining dark chocolate melting wafers into the tall microwave safe container. Heat in the microwave, stirring every 30 seconds, until melted.
  7. Remove the pineapple spears from the refrigerator and dip them into the chocolate to create a second layer of dark chocolate.
  8. Place the freshly dipped pineapple spears back on the wax paper and return to the refrigerator to set, about 15 minutes.
  9. Place the white chocolate melting wafers into a piping bag. Heat in the microwave, massaging the bag every 30 seconds, until melted.
  10. Remove the pineapple spears from the refrigerator and pipe a drizzle of white chocolate onto each spear.
  11. Let the chocolate set and enjoy. Store any remaining pineapple in the refrigerator.
