Happy Easter! Our Easter celebration is a bit lower key this year, but we’re still adding a bit of Disney magic with these Mickey shaped bunny butt and Easter egg rice krispies! Inspired by the spring treats found in the parks, these fun rice krispies are a super easy way to brighten up your Easter or spring-time celebrations!
Mickey rice krispies are my favorite Disney Parks treat. Since they’re so easy to make, they are my go-to when I need a little bit of Disney magic at home. When I first saw these bunny butt rice krispies, I knew I wanted to make them as my Easter treats this year. I decided to add a second pattern to my rice krispies inspired by the Minnie Mouse Easter egg caramel apples in the parks. I love the pastel colors of that apple and knew it would be a fun addition.
The bunny butt rice krispies have a white candy melt coating and coconut marshmallow tail, and the Easter egg rice krispies have a purple candy melt coating, pink and blue candy melt decorations, and sprinkles.
To make the rice krispies, you’ll need six cups of Rice Krispies cereal, 12 oz of regular sized marshmallows, and three tablespoons of butter. I like my krispies to be extra gooey, so I use more marshmallow than other rice krispies recipes do. Just take a few out of the bag to use as the tails for the bunny butts.
First, melt the butter in a large saucepan. I like to use a high-sided one as it helps me keep the cereal from spilling out the sides. Once the butter has melted, add the marshmallows and stir until melted. I like to use a silicone spatula sprayed with a bit of cooking oil.
When the marshmallows have melted, turn the heat off. Add the Rice Krispies cereal and stir until the cereal is fully coated. Then, transfer the mixture to a baking sheet or dish that has been sprayed with cooking spray. Use your spatula to press the mixture down onto the sheet. Let cool to room temperature before cutting into Mickey shapes.
Using a Mickey Mouse cookie cutter, cut out 12 Mickey shapes from the layer of rice krispies. I used a medium sized cutter that I got in a set but you can use any size you have. One of my favorites is the small Mickey cookie cutter from Wilton. After you’ve cut out the Mickey rice krispies, place them on a wax paper covered baking sheet. The wax paper will keep the rice krispies from sticking to your work surface. It’ll also make the clean up from decorating easier!
I made six bunny butt rice krispies and six Easter egg rice krispies. You could also do all of them as bunny butts or all of them as Easter eggs. You’d just need to adjust the number of marshmallows you save to match the number of bunny butts. For example, I saved three marshmallows to make six bunny tails.
For the candy melts, I used Ghirardelli White Melting Wafers. I bought them at Target and really liked using them. If you can’t get to a Target, you could try your local grocery store or Amazon. Other brands of candy melts will also work. I typically use Wilton Candy Melts but I had a harder time find them with the store closures and restrictions. To make the colored candy melt coating, I used oil based food coloring. I wasn’t able to pick up any colored candy melts at the store but if you happen to have any, you can use them too.
To decorate the bunny butt rice krispies, first place a few spoonfuls of white candy melts in a microwave safe bowl. Melt in the microwave, stirring every 30 seconds. Once the candy melts are melted, dip six of the rice krispies so that the tops are fully covered. Use a small spatula to scrape off any excess. Place back on the wax paper covered baking sheet.
Cut the marshmallows in half and dip the uncut side into the candy melt. Then, dip the marshmallow into a small bowl of shredded coconut. Place one marshmallow cut side down in the center of each of the freshly coated rice krispies. Place in the refrigerator to set.
Once the bunny butt krispies have set, melt a small amount of the white candy melts. Dye them pink using the the oil-based candy coloring. Transfer to a ziploc bag or a piping bag with the tip cut off. Pipe pawprints on the ear parts of the bunny butt rice krispies. Let set. Save any remaining pink candy melts for the Easter egg decoration.
To decorate the Easter egg rice krispies, first place a few spoonfuls of the white candy melts in a microwave safe bowl. Melt in the microwave, stirring every 30 seconds. Once the candy melts have melted, stir in the purple oil-based food coloring. Then, dip six of the rice krispies in the candy melts so that the tops are fully covered. Use a small spatula to scrape off any excess. Place back on the wax paper covered baking sheet. Before the candy melt sets, sprinkle green sanding sugar on the lower third of each krispie. Then, place all of the krispies in the refrigerator to set.
Once the candy coating has set, re-melt or re-make the pink candy coating and repeat the process to make blue candy coating. Using the ziploc or piping bags, pipe a zig zag pattern in the middle of each purple krispie and then add blue dots in the valleys of the zig-zags. Let set and then enjoy!
Happy Easter!

In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Remove from heat.

Using spatula, press mixture into the prepared baking sheet. Let cool until krispies reach room temperature.

Spray the cookie cutter with cooking spray and cut out the krispies. Move cut out krispies to a flat surface covered with wax paper. Let rest while you prepare the coating.
-
For the bunny butt krispies: In a small microwave safe bowl, melt a few spoonfuls of the white candy melts, stirring every 30 seconds.
-
Dip six krispies into the melted candy coating, one at time, using a spatula to scrape off excess or add more to make a smooth coating. Place on a wax paper covered baking sheet. Add more candy melts and re-melt as needed.
-
Cut the three marshmallows in half and dip the uncut side in the leftover white chocolate candy melts. Dip in shredded coconut and place one marshmallow on top of each coated krispie. Place tray of coated krispies to set.
-
Once the krispies have set: In a small microwave safe bowl, melt a few white candy melts in the microwave, stirring every 30 seconds until melted. Add desired amount of pink oil-based food coloring and stir until fully combined. Transfer to a small piping bag or ziplock bag. Cut the end off the bag and pipe paw prints onto the ear part of the white coated krispies. Let set.

Dip six krispies into the melted candy coating, one at time, using a spatula to scrape off excess or add more to make a smooth coating. Place on a wax paper covered baking sheet. Add more candy melts and re-melt and re-dye as needed.
-
Add green sprinkles to the lower ⅓ of the purple coated krispies. Place the tray into the refrigerator to set.
-
Once the krispies have set: Either re-melt and re-use the pink candy melts, or melt a few white candy melts and dye them pink. With the pink candy melts melted and in a small piping bar or small ziploc bag with the end cut off, pipe a zig-zag pattern in the middle section of the purple krispies.
