Today is Sugar Cookie Day! I love any day that celebrates food but especially when it’s cookie related. Cookies are such a fun and versatile dessert and I’m excited to share these Brown Sugar Mickey Cookies! Over the years, I’ve tried a lot of different sugar cookie variations and I think these might be my favorite. These cookies are soft, moist, and chewy, with a yummy brown sugar flavor. Of course, there’s nothing better than Mickey shaped food, so I rolled the dough in colored sugar and pressed them together to make my favorite mouse!
These cookies are made entirely with brown sugar, which is unlike a lot of sugar cookies I’ve had. Typically, sugar cookie recipes use only granulated sugar or some combination of granulated sugar and brown sugar. I find the brown sugar adds a depth of flavor and moistness, which I really like. These cookies also have a bit of cornstarch mixed in to the dough, which helps them stay chewy.
To start, combine the flour, baking soda, cornstarch and salt in a medium bowl. Set it aside. In a separate bowl, mix together the butter and brown sugar, egg and vanilla. Then, add the butter mixture to the flour mixture and mix together until well combined. Cover and chill the dough in the refrigerator for two hours.
After the dough has had time to chill, preheat the oven to 325 F and line two baking sheets with parchment paper. Place some colored sanding sugar or white granulated sugar in a small bowl. I used red and yellow sanding sugar from Wilton and some regular white sugar to decorate my cookies. If you’re doing multiple colors, use multiple bowls or clean out the bowl between use so that the colors don’t mix. Or you could mix some colors together to make a multi-colored cookie.
Take about 1 tablespoon of dough and roll it into a ball. Place the dough ball into the bowl of sugar and roll it around so that the sugar covers all the sides. Place the ball on the prepared baking sheet. This will be Mickey’s head.
Take about 1/2 tablespoon of dough and roll it into a ball. Place the dough ball into the bowl of sugar and roll it around so that the sugar covers all the sides. Place it on the baking sheet at the top of the larger ball to make one of Mickey’s ears. Repeat to make a second ear.
Repeat these steps with the remaining dough, placing the dough balls 2-3 inches away from each other on the baking sheets. Aim to have six cookies on each sheet. Bake for 10-12 minutes. Let the cookies cool for five minutes on the baking sheet before transferring to a wire rack to cool completely.

Scoop out about ½ tablespoon of dough and roll it into a ball. Place the dough ball in the bowl of sugar and roll it so all sides are covered. Place at the top of the larger ball to make Mickey ears. Repeat to make a second ear.

Repeat steps 6 and 7 with the remaining dough, placing the Mickey shaped balls 2-3 inches apart. Aim to have 6 cookies per baking sheet.

Bake for 10-12 minutes. Let cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
