Today is National Pizza Party Day! Pizza is one of my very favorite foods and we’re having a magical pizza party with these Beer Bread Mickey Pizzas! Shaped like my favorite mouse, these adorable pizzas are quick, easy, and require no yeast! Just add your favorite pizza toppings!

Typically when I make pizza dough, I use yeast; however, I am currently out of yeast and haven’t been able to find any at my local grocery store. I wasn’t going to let that stop me from delicious pizza, and so I used a bottle of beer to make this tasty beer bread pizza dough. The alcohol in the beer cooks out and so you’re left with a light yeasty flavor. The texture is a bit denser than traditional pizza dough, so it creates a nice thick crust.

To make the dough, combine the flour, baking powder, and salt in a large bowl. Add 12 ounces of beer and stir with a silicone spatula until combined. I used a larger style beer for this dough. You can use any kind of beer of this recipe but I would recommend a lighter beer. The lighter beers tend to impart less of the beer’s flavor and since you’re covering it with pizza sauce and toppings, it works out.

Transfer the dough to a well-floured surface. Add more flour to the top of the dough, and knead it a few times. Add additional flour as needed, until the dough can be rolled out or pressed down without sticking to the work surface.

When the dough is easy to handle, roll it out to about 1/2 inch thickness. The dough will rise quite a bit when it bakes so it can even be a little thinner if you’d like. Cut out the dough using a large Mickey Mouse shaped cookie cutter. I used this cutter that I got in the parks, but can sometimes be found on Amazon. You could also use any large size Mickey cutter, or use a smaller one to make smaller pizzas.

Transfer the cut out dough to a baking sheet that has been lined with foil and brushed with olive oil. Brush the tops of the cut out crusts with olive oil, then add sauce, cheese, and whatever toppings you like.

Bake for 12-15 minutes or until the crust is golden brown. Enjoy these beer bread Mickey pizzas hot from the oven!

Ingredients

Beer Bread Pizza Crust

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 12 oz beer

Toppings

  • olive oil
  • pizza or marinara sauce
  • mozzarella cheese
  • pepperoni

Equipment

  • large Mickey Mouse cookie cutter

Instructions

Mickey Pizzas

  1. Preheat the oven to 450 F. Line a baking sheet with foil and spread a thin layer of olive oil over the foil.
  2. In a large bowl, combine the flour, baking powder, and salt. Add the beer and stir using a rubber spatula until well mixed.
  3. Transfer to a well-floured surface and knead a few times. Add flour as needed, until the dough is able to be rolled out or pressed down without sticking to the work surface.
  4. Roll out using a rolling pin to about ½ inch thickness. Cut into shapes using a large Mickey Mouse cookie cutter.
  5. Place cut out dough onto the prepared baking sheet.
  6. Brush olive oil over the top of the dough and top with sauce, cheese, and desired toppings.
  7. Bake for 12-15 minutes, until the edges are golden brown.
