Happy Friday! The new movie Peter Pan and Wendy premieres today on Disney+ and so I’m excited to share these Tinkerbell Cupcakes in celebration! These mini green vanilla cupcakes have yellow lemon frosting and a sprinkle of gold pixie dust!

Tinkerbell is such a fun and classic Disney character and while I’m partial to the crocodile, I knew she would be the perfect inspiration for this week’s dessert. These cupcakes are mini cupcakes, but can be double to make a small batch of regular size cupcakes.

To make these cupcakes, start by whisking together the flour, baking powder, and salt in a small bowl. Then, in a medium bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla, beating until combined.Gradually add the flour, beating on low speed. Then, add the milk and beat until combined. Add a few drops of green gel food coloring and beat until the color is fully incorporated.

Transfer the dough to a greased mini cupcake pan. I used a a pan that makes 12 mini cupcakes, but if you have one that makes 24 mini cupcakes, you can double the recipe. Bake the cupcakes for 8-10 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. 

While the cupcakes are cooling, make the lemon frosting by beating the butter until creamy. Add the powdered sugar, beating on low speed until just combined. Then, add the milk and lemon extract and once combined, beat on high speed until light and fluffy. Mix in a few drops of yellow gel food coloring and transfer the frosting to a piping bag fitted with a large round piping tip.

To decorate the cupcakes, pipe a swirl of frosting onto the top of each cupcake. Then, to add the pixie dust, dip a small, clean (never been used with paint) paintbrush into the edible gold cake dust and sprinkle it onto each cupcake.

Ingredients

Vanilla Cupcakes

  • cup all-purpose flour
  • ¾ teaspoon baking powder
  • teaspoon salt
  • 3 tablespoons unsalted butter, room temperatue
  • cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup milk
  • green gel food coloring

Lemon Frosting

  • ¼ cup unsalted butter, room temperature
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • ¼ teaspoon lemon extract
  • yellow gel food coloring

Decorations

  • edible gold cake dust

Equipment

  • large round piping tip

Instructions

Vanilla Cupcakes

  1. Preheat the oven to 350 F and spray a mini cupcake pan with cooking spray. Set aside.
  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a medium bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla, beating until combined.
  5. Gradually add the flour, beating on low speed. Add the milk and beat until combined.
  6. Add a few drops of green gel food coloring and beat until fully incorporated.
  7. Transfer the dough to the prepared cupcake pan and bake for 8-10 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
  8. Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely.

Lemon Frosting

  1. In a medium bowl, beat the butter until creamy.
  2. Add the powdered sugar, beating on low speed until just combined.
  3. Add the milk and lemon extract. Beat on medium high speed until light and fluffy.
  4. Add a few drops of yellow gel food coloring and beat until fully incorporated.
  5. Transfer the frosting to a piping bag fitted with a large round piping tip.

Assembly

  1. Pipe a swirl of frosting onto the tops of the cupcakes.
  2. Dip a clean paintbrush into the edible gold cake dust and sprinkle it onto each cupcake.
