Happy Friday! This month’s RunDisney Virtual 5K was Space Mountain themed. To celebrate completing it, I’m excited to share this Space Mountain Smoothie Bowl! While still technically a smoothie, this smoothie bowl does feel a bit more like a light dessert. Inspired by the darkest reaches of outer space, this Space Mountain smoothie bowl has a deep chocolate almond flavor, an almond moon, and banana stars.
Space Mountain is one of the rides at Disney that still scares me a bit. I think it’s something to do with how dark it is and how rickey the track sounds. It’s the darkness that really stands out to me though, and so that’s what I wanted to bring into my smoothie bowl.
I thought chocolate would be the best way to get a dark space like color. I knew regular cocoa powder would look dark brown and so, to make the dark color, I used black cocoa powder. This is a different kind of cocoa powder from what I typically use. Black cocoa powder is a dutch processed cocoa powder with a deep black color (like an oreo). I ordered some black cocoa powder from King Arthur Baking but you can also find it other places online.
I recommend starting by preparing the decorations as you’ll want to decorate the smoothie bowl quickly. To fit the space theme, I made a crescent moon out of blanched almonds. To blanch almonds, bring a small saucepan of water to a boil and boil raw almonds for one minute. Rinse the almonds in cold water and then squeeze them to remove the skins. Pat them dry with paper towels. For the banana stars, cut 1-2 fresh bananas into rounds. Use a small star shaped cutter to cut the banana rounds into star shapes.
To make the smoothie bowl, add all of the ingredients to a blender and blend until smooth. Taste the smoothie for sweetness and add a little more maple syrup if you want it to be sweeter.
Pour the smoothie into bowls and add the toppings. Arrange the almonds in the shape of a crescent moon on one side of the bowl and place the banana stars along the other side. Serve immediately.

Space Mountain Smoothie Bowl
Ingredients
Chocolate Almond Smoothie Bowl
- 2 frozen bananas
- 2 tablespoons black cocoa powder
- ½ teaspoon vanilla extract
- ½ tablespoon maple syrup
- ¼ cup almond butter
- 1 cup almond milk
Decorations
- 2 fresh bananas
- ¼ cup almonds
Equipment
- blender
- small star shaped cutter
Instructions
Blanched Almonds

Fill a small saucepan with water and bring to a boil.

Add the almonds and boil for 1 minute.

Remove the almonds and rinse with cold water. Squeeze the almonds to remove the skins and pat dry with paper towels.

Set aside until ready to decorate the smoothie bowl.
Banana Stars

Slice the bananas into rounds.

Use the small star shaped cutter to cut the banana rounds into star shapes.

Set aside until ready to decorate the smoothie bowl.
Chocolate Almond Smoothies

Add the frozen banana, black cocoa powder, vanilla extract, maple syrup, almond butter, and almond milk to a blender.

Blend until smooth.
Assembly

Pour smoothie into bowls.

Arrange the almonds into a crescent moon shape on one side of the bowl. Add the banana stars around the other side of the bowl.
